Hi @@IrmaU94. I actually use 2/3 cup of stock to ensure that the bottom of the pan is covered and doesn't burn. I am a little uneasy with only 1/2 cup. A lot will depend on the size of the pan that you use.
I eyeball the amount of olive oil I use to ensure that the chicken and potatoes get a good coating initially. Once you transfer the chicken and potatoes to your pan, there will be enough marinade left to use to cover everything prior to baking. That's what I do anyways!?

Made it today. Customized it a little bit: no rosemary, added fresh Lemon Thyme and not just the lemon juice but also the Lemon Zest (as someone has mentioned already, just lemon juice is not enough if you want "lemony" dishes). THE RESULT WAS AMAZING!! This recipe is a keeper. In my case it took not 45 minutes but 1hr 10 minutes for the chicken to be tender, I then broiled the chicken to a nice browning (couple of minutes). The dark meat was tender but the breast was overcooked (no surprise here, no wonder Chef John says to "ideally use dark meat" or something to that effect). After the chicken was done, the yukon gold potatoes I used were not quite done, I took them out and nuked them in the microwave until tender. Like many others, I found that the amount of liquid ingredients was too much, 20 minute into to the cooking I removed about half of the liquid and reserved it (will use it with left overs). Next time I will probably tent the roasting pan with aluminum foil and cook the chicken+potatoes for 1hr at 350F, then remove the Alu-foil and increase the temp to 425F, once the breast is at 157F take it out, once the Dark meat is at 162F, add the breast to the pan and broil the whole thing to a good browning color. If after all the above the potatoes are not tender, will nuke them. The star of this recipe for me is the sauce, which can be thickened to your liking, before you do that, taste it, because sometimes thickening sauces may produce too intense flavour that could make it taste salty. If the taste is right, next time cut some salt. You could thicken it with starches, but I wouldn't do it, I want sauce not gravy for this AMAZING dish. Thx you Chef John.

Try it with a little bit of mustard and some feta cheese on the side next time chef.

Chef John, if you save the juice from the pan dripping they are awesome as a base to make rice. P.S. This work best if you marinade over night.

When you cook rice you usually use 1 part rice to 2 part liquid so if you use the drippings/juice from making this dish in place of some of that liquid you end up getting all that flavor in your rice.
P.S. Let the dripping cool so the grease settles and you can spoon some (but not all ) of that grease off.
Try this and let me know what you think.

Chef John representing!!! Greetings from Greece my friend! Tzatziki is ok for this heavenly dish, but I would recommend a fairly pepperie Feta cheese or even fresh mizithra or anthoteero (greek buttery AMAZEBALLS cheese that is either without salt or with) which is more subtle and soft at taste. And you should try dry mizithra on your pasta dishes instead of parmezan. Parmezan is certainly good but dry mizithra will taste and feel like velvet in your mouth. And try replacing riccota with fresh mizithra or anthoteero for the cheesy filling in your lasagna.... If only we had the marketing tactics and when it comes down to it, really cared about it to pursuit, like the French and the Italians do....

    Suggestions to fellow cookers :
( stuffing chicken and potatoes in a small pan and also not drying your chicken well after cleaning your chicken may result in “swimming chicken and potatoes” )
I used a big pan like Chef John chicken needs to have room ( don’t stuff chicken and potatoes in a small pan , you may need to adjust the chicken broth or water if you use an even bigger pan ), dry your chicken well with paper towels before following recipe it’s makes a huge difference and if you want more browning add some paprika, and lastly if you don’t Have oregano; thyme is a great substitute .

@@wtjax The chicken I would just make chicken salad with it at this point . And as for the veggies drain them dry them just toss them In some extra virgin cooking oil the kind that says for roasting or baking , seasoning of choice Ornsalt /pepper / garlic powder /a dash of paprika and just roast the vegetables , then toss with fresh parsley when done. Voila meal saved!

A few tips about how almost every family in Greece do this recipe:
Just mix all the ingredients straight to the pan
Then go straight to the oven
Cut the potatoes in smaller pieces
    Dont use rosemary and cayenne
And we just use some foil on top and when the potatoes are almost done just remove the foil.
The flipping process adds a lot of flavor.
Chicken and potatoes is supposed to be a quick and easy recipe so the last steps are unnecessary
BUT I see this recipe as a fancy one for chicken and potatoes and it s not bad at all. Choose whatever you like, the quick one or this one.. it s all about time :)
