    Hi Dani, I made this dinner tonight. I used coconut oil instead of avocado oil and stuffed 1/2 orange and fresh rosemary into the chicken. It was The Best Chicken I have ever made!!!!! The potatoes were sweet, and flakey. Thank you for all your inspiration and amazing recipes. I appreciate all that you do!!!

    I do the exact same thing, I place a frozen compound butter that I make beforehand in the chicken, cut whole lemon. Tie the legs and place it on a rack in the refrigerator for 1 day. Then I place on a bed of potatoes, any vengetables , shallots, onions, garlic all rough cut. 370f for 1 1/2 hour, crispy skin and so good

      Clean & Delicious I've seen a recipe in a cook book where they cut the back of the chicken so it lays just flat on the try....I wonder if cooking time will change cooking it like that? Have u tried? Would u recommend doing it like that as well?? 🤔🤔🤔

      I have been butterflying my chicken, for roasting, for a few years now. It takes about an hour for a 4 lb chicken at. i'll say 400 degrees. The meat cooks more evenly since the bird is all one one level, but is still tender and juicy. I like to do an herb rub under the skin of the breasts, thighs and legs, for extra flavor.

      From my experience, not all the fat that is released from the chicken is healthy... This is why I prefer to put it on a grill. I then recuperate the oil and fragrance, let it rest in the fridge over night and remove the thick layer of fat that floated and rested on top. I then use the gelled juice as a base for brown rice and some of the chichen as a sauté with vegetables; UNBELIEVABLE flavours!

    Looks great. Placing the chicken on a bed of roasting vegetables is a great way to roast the chicken, plus you get some roasted vegetables to go. Even a bed of Onions cut thickly would do and you get lots of flavor for later.

    This is Lori Bach. I appreciate all of your tips! I don't own a cast iron skillet and offer another substitute for those not having one either. I cook my chicken, as well as a whole turkey, in a brown paper shopping bag in a 9x13 glass baking dish on a wire rack. I haven't tried cooking sweet potatoes in it however but look forward to experimenting!

      I learned the paper bag thing in the 1980s from a TV talk show featuring Charles Nelson Reilly the chicken comes out moist, with crispy skin and nice and tender. Yummy!

    Everything looks yummy! With the salad I like to add feta. Buy a block of it at Sam's or Costco and cut it in sections saran wrap then freeze it and take out what you need to add to your salad.

    I like to put cut up onions, celery, carrots and rosemary inside the cavity and also on the bottom of the chicken to cook in the juices. Great idea to add sweet potatoes to.

    Love this recipe!! May cook a few minutes less. Breast meat a little dry. But the best roasted chicken I ever made. We have electric stove. I know they tend to cook differently. Thank you. It was so easy to make too. May try different spices next time, but salt and pepper was enough!! I used grapeseed oil. That is all I had.

    I simply love roasted chicken and we have it often. I like to rub my seasonings very gently underneath the skin so it will cook into the meat. I rub the cavity and the outside as well. It comes out so very tasty on the inside as well as the outside. I love your videos. Everything is so good and so healthy your one of my favorites.

    I was in the middle of watching another RUclips video when the notification popped up about Whole Roast Chicken Recipe by Dani Spies ... I stopped the video and immediately clicked on the notification pop-up which took me right here. This is the first time I've heard of Roasted Chicken with sweet potatoes! Aaannnd it's paired with a "Kitchen Sink" side salad. Ok let me stop typing so I can pay attention to the video. 😉

    My go to recipe before I stopped eating meat was roasting a chicken with red potatoes and root vegetables. I still make this for company. I will try it with the sweet potatoes next time I have company, I think I will prefer them. I am going to try the vinaigrette this week! Thanks for another great vid.

    Well Danny , I wish I would have taken a picture. Made this chicken (organic, Wegmans) tonight , wow ! Delicious
    I also did In my cast iron skillet. Oh my, chicken crisp on outside, moist chicken and oh those potatoes.....I can’t say enough about how good this was..will definitely make again and again......did use garlic salt and garlic.

    Looks amazing and will definitely do this version in a cast iron along with the robust potatoes. I will have to remove all the fat from under the chicken that runs along the thigh, remove, remove the slime and raw smell of the chicken with lemon juice.

    Loved the video! Oven Chicken and sweet potato is one of my weeknight diners. It´s very simple to make and turns out delicious! Usually I just pour whatever seasoning I have at hand (oregano, cumin, salt, pepper) and it works perfectly. Also just last week I was searching for a simple salad dressing. Thank you for such a great video!

    I actually never ever jave roasted an entire chicken, precisely I have a entire chicken on my freezer, will try to do this in the week. Two questions, I see your using Avocado oil, can be used to cook normally, is it better than olive oil? I recently bought red grape oil and I use it in salads because I didn't liked the flavor of olive oil, is that one good too? Another question is sweet potatoes are better than regular potatoes, I never have ate them in a savory dish, you don't have answer everything maybe just an idea for future videos specifically the oils I asked, thanks so much Dani 😇

      Avocado oil is not necessarily better than olive oil but it does have a higher smoke point. HEre is a great article talking about grape seed oil - > draxe.com/grapeseed-oil/. And finally, sweet potatoes, again - not better, but they do digest a bit slower and have a few extra nutrients in them :)

    I'm going to make this tonight for supper in Seattle! Perfect meal for a solar eclipse! 🌑I make our house vinaigrette with the exact ingredients as yours! My mother taught me to mix the seasonings and vinegar first, then add the oil. She says the oil suspends the seasoning while the acid allows the ingredients to meld together best. Thank you for another great video; your recipes are the ONLY ones I use these days! Thank you, Dani! You are such a blessing!! ❤️

    Dani, what is your opinion on instapots? I have been wondering if they are worth the investment. I like that you can cook a Bone Broth in less than 3 hours instead of over 24 hours.....Interested in your opinion.

    Yummy in my tummy. I made an 8-pounder today for Sunday Suppah and for reworkings through the week. Celery tops with leaves and a poked lemon in the cavity. Gibbies/ pipiks simmered for kitty (except liver -- that's for the chef).

    Good video! I might try this as well. One thing I don't think you mentioned was that this is a relatively inexpensive recipe as well! Have you ever tried tahini paste in your salad dressings? It is high in the mineral copper supposedly.

      These were the basic sweet potatoes - they have a tan/beige color. The sweet potatoes that are more orange - are usually called yams. :)
