This is the first time I ever in my life basically cooked. My husband always did all the cooking. As I was saying this is the first time I ever made black eyed peas. After a long talk with God and asking him to bless them. I wowed my family and myself and made the best black eyed peas using your recipe. My daddy didn't believe that I cooked them. Thank you, thank you, thank you for making a cook out of me.

Smashing was a new one on me, too. I always just cooked them another hour or two until they fell apart by themselves. This is not only faster but better, because not all the beans have the same texture, which makes the dish more interesting -- it's almost like beans in a bean sauce.

You make the most mouth watering stuff, I don't know whether to do collard green jambalaya, chicken pot pie or these black eyed peas first. 😛

Oh AB! This is exactly how we fix black eyes! Also it was the way that my Mom and Grandma fixed them! Way too many videos that I have seen go to extremes to add flavor by adding celery, onions, bell pepper and cook them down before adding the peas. I'm with you, I want to taste the black eye peas! These served with some rice, turnip or collard greens, and a skillet of cornbread, nothing better!
Thank you Sir for sharing how you fix them and wishing you and yours a very Happy New Year!

And after watching this great video, I will definitely be trying this. Man, and the way you showed how to make the juice thicker was so enlightening. I never knew that was the trick!!!! Couscous for me, and cornbread for sure! Thanks Ray! Used the ham bone making split pea soup, but think I got enough left over ham to get this done.

I would use turkey also, and I do not like onions, but garlic is great. I just substitute turkey, since I do not eat cancer causing pork.

I am so glad you took the time to put this recipe and method out there. These are the recipes I grew up with from my mother and my grandmother, and never seemed to have learned. Now, it’s a desperate scramble to find these recipes so I can keep them close so I can remember home, and remember where I came from.
    Thank you so much.

You are a sweetheart! My dad was from Georgia. He used salt pork, and served it with cold, raw, diced onions as a garnish, and chopped green onions for color. What I learned from you is to smash some of the beans to thicken the pot liquor. I'm making these for my family today. Thanks for the tips. Much love to you, aloha.
