Awesome demo, Chef Eric! We lived in Japan fifty years ago and I learned how to make fried rice from my neighbor okusan. Been making fried rice forever but learned a lot from you….Thank you!
During peak covid i was stranded with friend who manic-made fried rice with every meal. this tutorial would have been much more helpful then, but I still shared it with him now!
Eric, nice touch. Looks like a nice comfort food, annnd it looks as though I need to order a wok one of these days. General comment on these MadeIn vids: I truly enjoy most of them. We frequently make fried rice, but not quite this way. Thanks, Sir! Next time around will use your methods.
Peached Tortilla is very legit and so is the carbon steel wok. Also, I have been cooking my eggs with the rice like a FOOL all this time... I feel saved now.
I want to make this recipe but I've never bought lap cheong before. It seems like there are a lot of different Chinese sausage brands sold in the various asian grocery stores here. Any idea which one is being used here? I want to get the same flavor. 🙂

Great video, but you're butchering the lap cheong, figuratively and literally. When you pronounce "cheong" the o is less emphasized, should sound like chE-ung, but in one fluid syllable.
No fish sauce?!? No soy sauce?!?? GINGER?!?? no chilis?!? no sugar?!? and above all NO MSG!!?? UNCLE ROGER HEEEEEEEELLLLLLLLLLLLLLLLLPPPPPPPP SUCH SIN TO THAI/CHINESE PEOPLE!!!!!
Who is we? I see you. And I know how to cop onions. I wanna hear your idea about your recipe. Go beat your eggs on your own time. This video should have been 5 min tops.
Got some leftover rice in your refrigerator? Highly recommend this Fried Rice recipe by Eric Silverstein!

Fried Rice is an amazing staple dish! Can't wait to make this version!
Is there a vegetarian substitute for the lap cheong that you would recommend?
Just don’t put it in.it will still be delicious
Or you can try chopped fried tofu.
What happens if you have induction not gas cook top, does WOK cooking work the same?
Never seen lemon yellow egg yolks before. The technique demonstration is so simple. Thanks.
I just made fried rice for lunch but I hate doing it because the rice always sticks horribly in my wok. Maybe I just need it hotter with more oil?
I'm shellfish allergic. What can be used instead of Oyster sauce?
There's vegetarian oyster sauce by kikoman or lee kum kee
@@brianmw8559 Thanks, I'll look for that.
Beware. Kimchi has also fish sauce in it
My fried rice is always soggy! This helped a ton thank you chef and @madein

I’ll put my made in stainless steel saucepan rice up against a rice cooker any day. As always great video - thanks, chef!

Uncle Rodger approved?
Not with the red onion and miso paste. Might as well throw in chili pepper jam at this point….
Where is Uncle Rodger?!?
