I tried this this morning, I've been familier with Chilaquiles for some time, mainly the "verde" type, in Mexico and here at home in Colorado. I was always a bit underwhelmed by them. Chef Nuñez's version was great! I absolutely loved them! I used 2% milk (cause I had no cream) and beef stock but I was blown away by how good these are. I will make them again with the correct ingredients soon
This dude is funny! I love it. I am going to try this, (the tortilla part) but I don't like or eat any type of pork. What about ground turkey as a substitute?

Well, I now know what I’m making this Saturday AM! Though I’m devastated that there isn’t a great garlic peeling hack. Maybe the product wizards at made in can solve that.
Umm...never seen this kind of chilaquiles. No epazote, no raw onion. Heavy cream instead of crema? This is more like a pasta dish with tortilla chips but no chilaquiles. It looks good but never seen some orange chilaquiles.

Looks great. My aunt used to make these fairly often for us kids for breakfast, but hers were a softer variety. I will definitely give this a try.
