I've tried different apple cake recipes, and I made this one yesterday, and I really like it. It's simple yet very flavourful and harmonious. Thank you!
This recipe is incredible. I made the cake, ate three-quarters of it, barely managing to save one-quarter for Hubby. So, I had to turn it into a muffin recipe. Then, I made muffins. The dough wasn't easy to pack into the muffin tins. Still a great muffin. So, I made it again adding one-quarter cup of unsweetened almond milk. Easy to pack into tins, and still a fantastic muffin. Two more bakings, the latest baking finds my muffin dough at: 2-apples, plus 480 grams of dried cranberries, walnuts, and pecans. I started using my food processor to get tiny apple and nut pieces of a size much more muffin-friendly. Wildly incredible muffins. All gone, gotta make more. Tomorrow I'm going to try another version, chocolate. I'll add one-quarter cup of Dutch-processed cocoa powder and remove two-tablespoons of flour. I'm staying with 2 apples, plus 480 grams of cranberries, walnuts, and pecans. Fingers crossed. Phenomenal recipe. This muffin makes all of those muffins found in specialty shops taste whimpy, weak, and light. It makes one realize exactly what the difference is between a baked-for-profit muffin and a home baked muffin where you get to control the quality and quantity of ingredients. Hubby and I record 1-to-5 Star Ratings on our recipes. Hubby says, "I give this muffin 11 stars". Chuckle, chuckle. I say, "Give this muffin an International 2024 Food Award". The best apple cake ever, going to make this tomorrow for the 4th time. A friend of me and my boyfriend is in a nursing home and I brought it to him and he likes it very much, so every time we visit I have to make this for him and bring some. Well done!
Nice recipe. I made just half a portion of the recipe which was very easy to do and it turned out beautifully. I think the lemon juice and lemon zest really does the trick here. Recommended.
I made mine in a silicone loaf pan in the toaster oven. I did not get as much batter as in the video. I do weigh my ingredients, so that was not the difference. Mine came out much smaller than it shows in the video. It is a little oily too, again, I weighed the butter. I ate two slices only after being out of the oven 20 minutes. I could not resist, the smell was amazing. It tastes absolutely delicious! Thank you!

OMG! This is my high school best friend’s mom’s recipe ( Mexican ) But I add cinnamon, pecans and a little sugar on top before baking it. Powder sugar when it cools off. ❤❤❤❤❤❤❤

I made this last night, and it's gone already. This morning hubby and I took the last two portions, broiled them in the toaster oven for 9 minutes to crispy brown, and slathered butter on top. This was a lip smacking yummy treat with our morning coffee. Tonight I'm going to make this again, but bake in muffin tins with parchment liners. I can give some away and avoid eating the whole cake by myself.

I might have used just a little bit to much lemon juice but that is probably a matter of personal taste and all lemons are different, some juicier than others. It has a very nice flavor not to sweet. I just made this. I did not add any other of my usual apple spices ie cinnamon, allspice because they would overpower the lemon. So, if you make it "as is" and you want those spices, a simple powdered sugar glaze can give you that. It's my plan for the spice lovers. And pecans, too!

Can confirm that this is a simple recipe that tastes absolutely delicious! The only thing I added was a little vanilla extract. For people that have a heavy sweet tooth they can use a bit more sugar, but for me it was perfectly fine on it’s own or with a scoop of ice cream 😋

Yes, you can substitute wheat flour with other types of flour. However, the type of flour you use will affect the texture, flavor, and overall outcome of the cake. I have tried tapioca/rice flour mix, and it was different from the original cake but tasted quite good.

I made this and though it's good, my dough at the end didn't look like yours and I weighed everything out just like you. I saw other recipes for Italian Apple Cake and they had a little salt and vanilla.

I don't add salt to the recipe because I use salted butter. However, you can use unsalted butter with a pinch of salt, as mentioned in the description. I also don't use vanilla extract because I find that the natural sweetness of the apples, the abundance of lemon zest, and the richness of the butter are enough to flavor the cake. But feel free to add a dash of vanilla extract to your dough if you'd like :)

I haven't personally tried these substitutes, they are commonly used in baking as egg replacements according to various sources and recommendations. Can confirm that this is a simple recipe that tastes absolutely delicious! The only thing I added was a little vanilla extract. For people that have a heavy sweet tooth they can use a bit more sugar, but for me it was perfectly fine on it’s own or with a scoop of ice cream 😋

I made this and though it's good, my dough at the end didn't look like yours and I weighed everything out just like you. I saw other recipes for Italian Apple Cake and they had a little salt and vanilla.

I don't add salt to the recipe because I use salted butter. However, you can use unsalted butter with a pinch of salt, as mentioned in the description.
I also don't use vanilla extract because I find that the natural sweetness of the apples, the abundance of lemon zest, and the richness of the butter are enough to flavor the cake. But feel free to add a dash of vanilla extract to your dough if you'd like :)
