    I’ve had Bifanas my whole life prepared by many people from many parts of the Azores and Portugal. I have NEVER seen it like this. This is his take on it. Traditional Bifanas is mainly just pork, marinade and bread (usually Papo Secos). Would I eat his take on it? Oh absolutely. Looks delicious. I wouldn’t pass on good food even if it isn’t 100% traditional.

      I think the deal here is that the bifana is a food to get when you want to be fadt or are outside of home and just want to eat, like its not a food you eat at nice restaurants, its a food you eat in the lunch break, so because gordon has the skills and time to make it into an famcy plate it kinda goes agaisnt its objective (but still a really cool plate tho)

    My girlfriend is Portuguese and we have been together 4 years. The food is absolutely on another level. I’ve been many places arounf the world and none have come close to the food I had in Portugal. This however, while it looks delicious, is absolutely nothing like bifanas.

    Portuguese food is definitely one of the most under appreciated cuisines on earth. It is so damn good. The soups, the fish, the cheese, all of it.
    Edit: I never should have made this comment. To all the Portuguese people out there, I understand this is not a real bifana. Please stop replying that. I just wanted to express how much I love Portuguese food, not get dogpiled because the sandwich has peppers on it and is the wrong kind of roll.

    Not a typical bifana sorry. That sandwich looks absolutely brilliant, but it's far from a bifana, which is only thinly sliced pork and mustard on a heated papo seco (a fluffy bread). Never in 25 years have I seen someone serve cheese on a bifana. Red peppers and onions....sometimes... but a typical bifana only takes 3 main ingredients: pork, mustard, bread.
    I visit their birthplace (Vendas Novas) almost every month and visit the oldest and original restaurant where they were supposedly created (Café Boavista). It opens at 5AM and starts serving all day long until midnight. I've had bifanas for breakfast several times!
    EDIT: i apparently sparked a huge discussion and I just want to emphasize what a lot of
    people are saying: if tourists come to Portugal and expect this bifana when they ask for a tradicional bifana, they’ll be extremely disappointed. I said “that sandwich looks absolutely brilliant” and I stand by it, but foreigners need to understand that the title is misleading, and they’ll (probably) never be served something like this if they ask for a bifana.
    Also yes, we Portuguese defend our culinary almost as much as the Italians do. Deal with it

      Yeah I had a problem with that. He literally complained when he was served a burger too big for his mouth on kitchen nightmares. I'm not sure using an entire loaf of bread for a sandwich is a good idea instead of slicing it up because it makes it way too big, but what do I know, I'm not a chef

    Although that "hamburguer style" sandwich looks amazing it is NOT a traditional bifana.
    Bifana on bread is stewed on a pot and served with its own sauce.
    Come to OPorto and order one to see the major different!

    Wow! What an incredible creative way of cooking a pork steak - it really looks delicious and what an inspiration. However, after 62 years as a native Portuguese, eating bifanas all over this country, I have to point out that there's nothing remotely resembling a traditional bifana here, which is normally marinated pork steak, cooked on stove top (NOT BBQed).
    Thanks for the new recipe on pork steak tough...

    Absolutely gorgeous interpretation of a bifana. Cooking them on charcoal vs a pan is next level delicious. The version I’m used to has a marinade with wine, a ton of garlic, pimenta açoreana, sea salt, pepper, olive oil and paprika. You’ve inspired me to experiment with this recipe, so thank you.
    One thing- cured sheep milk cheese is divine- and precious. I’d never use it as a melting cheese and in those proportions.
    I thank you for honouring Portugal, and for all of your delicious work.

    We never ever have made any Bifana that way. That's Gordon's take on a traditional dish around here and I respect that but that is NOT Bifana. It's just Gordon's Pork Sandwich made in Portugal, not Bifana. The bread is too heavy, we don't put cheese on it not even other stuff. It's a simple fried pork thin steak sandwich with mustard in a light bread called Carcaça (aka Papo Seco). And it's like that from north to south, east to west in every single restaurant, food joint, pub, whatever. Even at McDonald's...!!

    Thats not the traditional bifana recipe.. but i can tell you how you can do it properly :)
    To marinate the pork you use chopped garlic, salt, bay leaf, beer and if you like some spicy add some chilli,
    In a frying pan you use olive oil and vegetable cream butter, on low heat you cook the meat.
    For the bread we use "carcaça" and once again, not the type of bread you are using..
    For the grand final! Cut the bread, put the pork with some sauce of the frying pan and add mustard.
    There you have it. Thanks from Portugal

    I've spent considerable time in Portugal. That has almost no relation to a real bifana. It looks great, but it's not a bifana.

      I am Portuguese and I can confirm this. There are many ways to prepare a bifana, depending on the region of the country, but this is none of them.

    This looks good but this isnt what it is, its about the sauce, the old locals make it the best!! Cheese in a bifana is almost a crime!! Also we use a specific bread called paposeco, its soft and fluffy and it gets moist and soft with the delicious sauce!!! This looks pretty but its not a traditional bifana its more like an international version ahaha in any case hope youre enjoying it here.

    For those of you who can´t understand a simple concept. The point of this whole series is not to replicate the traditional dish. he calls it a traditional bifana because he is in fact in portugal and he is working with traditional portuguese ingredients in order to make a bifana-like dish, it's his take on it. Also there isn't any set of rules when it comes to kitchen and much less premium quality dishes. Why are people trying to restrain how people cook, i don't understand.

    How difficult is it to understand that this video is about the Bifana?! It is Gordon's take on the tradicional done HIS way! Everyone going off on one saying he butchered a portuguese meal or that doesnt even resemble anything about the tradicional Bifana has obviously never seen how Portugal has butchered Kebabs/Fish and chips and many other meal! Gordon is grabbing tradicional recipes and making his take on them, the way he likes it and what would suit a proper restaurant, not a corner tasca!     Pessoas que estão a dizer que os tugas estão a ser tugas e a criticar tudo, já pensaram, como já alguém aqui mencionou, nas consequências que isto pode trazer a nível turístico e gastronómico? Turistas acharão que as bifanas são assim e farão más críticas quando lhes servirem uma bifana tuga. E os donos das tascas e afins sentirão necessidade de alterar o modo como fazem as bifanas. O Ramsay só tinha de não dizer que o que ele fez é a tradicional bifana, mais nada. É uma sanduíche fantástica mas não é a bifana tradicional tuga.

É muito triste quando as casas ganham fama e deitam-se a dormir :( se calhar, agora que menciona isso, foi uma bifana dessas secas que serviram ao Ramsay e ele viu realmente a necessidade de a reinventar :D só é chato ter de ser um estrangeiro a vir fazê-lo.

I don't understand why portuguese people are so critic about your recipe of portuguese bifanas: you have used the main tradicional ingredients - pork steak, paprika, olive oil and added some of yours - chese, vegetables, hum and created a beautifull "Gourmet Bifana ala Gordon Ramsey" that someone can pay 20 ou 30 €: its a real lunch.     Man gordans hit the peak. Even in hells kitchens new season hes starting to be less harsh. He still holds the same level of excellence but he has really refined the approach.

    People should read the description on this video. It literally said "his take" on bifana. The title did not even mention terms like "traditional" or "authentic".

    I love Gordon Ramsay's use of euphemisms whenever he tries to cover for a mistake. For instance, when he says 'really nice and crispy' you know what he really means is 'burnt to a cinder'. Because that bread is burnt mate.

      It may look burnt, but it just looks like it on film. Try to take pictures of your food and you can see it yourself. Other then that I do agree that he tries to cover for his mistakes at times.

      Difference between burnt and charred. 100% agree that would be burnt coming out of a pan or oven, but off an open cooking pit with a wood fire, it’s actually better a little charred

      @@Torment87 let me put it to you another way…you go to a pizzeria with a wood fired oven…your pizza is gonna be dark on the bottom and have tons of flavor. Take that same level of darkness from a pizzeria with a conventional pizza oven and it’s bitter and burnt. Charred is a real thing my guy. Especially when dealing with a heartier, more rustic dish. But keep enjoying a flavorless life 🤷🏻‍♂️

    First, you don't go to Nazaré for the Bifana, you go to Nazaré for the fresh fish! For bifana, you can eat anywhere in Portugal, but the general consensus is one of the best is from the town called Vendas Novas. Second, for the cheese, you can go sheep cheese, but that sort of cheese we normally don't use mix other stuff. It is used as a starter or orderve. For sandwiches, we got far better cheeses. What Gordon did here is not a Bifana!!!! That is pork sandwich with different stuff in it. Looks good, but a bifana, is far simpler than this. It is simply a slice of pork fried in a special sauce and then you place it on a bread that we called Carcaça (or Papo Seco). That is it. Nothing else. No need to invent the wheel, Gordon.

      What you have is a bias and a terrible, uniformed opinion. What I have is a fact you can Google, right now, and see he's ranked joint 6th for most Michelin stars, in the world. I know you refuse to be informed but that's the gold standard chefs aspire to.
      He used to be second but he spends too much time these days frying eggs on top of mountains and other pointless stuff to retain more stars.

    Actually, there are two types of bifanas in Portugal. In the North (Porto and North of Portugal), a bifana is thin slices of pork meat STEWED in hot, spicy sauce for a long time. Then you serve it in a bum and dip the bun in the sauce, for extra "yummyness". More to the South, it is a fried/grilled pork stake served with mustard in a dry bun (so uninteresting). What he's done there is more similar (in presentation) to what we call a Pernil sandwich (pork leg sandwich), in which we use roasted meat that's cooked to melt in your mouth, and that, yes, can have melted cheese with it. The peppers and other seasonings are used in the cooking process, be it stewing (bifana) or roasting (pernil), not used as garnishing. Paprika is a no go.
    Sorry, Gordon. You need to stick around the whole of Portugal for quite a while longer to know your "sande de bifana" from the prego, pernil, panado, filete, coirato, presunto and francezinha sandwiches, just to name a few.
    And whatever they tell you, never fall for the bolinho (or pastel) de bacalhau with Serra cheese - it's a tourist trap, nor traditional at all, that costs 6x the price of the simple and really traditional ones. Just sayin'...
