    I ate at the original Gazela the day that Anthony Bourdain passed away. He was a big influence on me going to Portugal and I remember feeling heartbroken walking in and sitting down at the bar. The guys poured me a beer, passed me a sandwich drizzled in that amazing chili oil and with the first bite I felt a warmth and comfort I will never forget. With tears running down my face one of the cooks asked me if it was ok, I responded yes! Then I just said Tony’s name. The cook pointed over my shoulder at a picture of Anthony sitting in the same spot I was sitting and we laughed and taped icy cold glasses of beer in his memory. It was a moment I will never forget.

    The "magic" of the portuguese cuisine it's the simplicity. Simple ingredients, simple methods, and grat results. It's not fancy as the french, it's the opposite. The beauty of simplicity.

    • @silver_surfer88
      @silver_surfer88 8 месяцев назад +12

      Yes! We get away with it because of the extreme quality of the ingredients so not much additives needed, sometimes just a pinch of salt a bit of olive oil and you can cook a lot of dishes like this.

    • @HawkEyesAndy
      @HawkEyesAndy 8 месяцев назад +4

      actually one of the key ingredients in an explosively good dish is to keep it simple, not overcomplicate things....even the best chefs in the world will say the same on most dishes, there are exceptions of course, but as a rule of thumb, keep it simple..

      @dnkroz_music 8 месяцев назад +2

      @@silver_surfer88 the food in Portugal is good, yes, but I have a feeling of stopping in time, not experimenting anymore, the old doesn't need to cease to exist for new things to come, I think that's what makes Portuguese food not have as much relevance in the world, it's lacking innovate, and a little marketing

    • @silver_surfer88
      @silver_surfer88 8 месяцев назад +1

      @@dnkroz_music I think I understand what you say, but there is not lack of people trying to refine things, in the future we will talk about regional food but there will not be such thing as a French cuisine due to globalization

    • @ivobatista4018
      @ivobatista4018 8 месяцев назад +2

      @@dnkroz_music There's plenty of new restaurants around Portugal that combine older recipes with and ingredients to make new dishes that didn't exist for example 20 years ago. These places are not tavern type "street food" yet the food is exceptional! Italy for example is far more bound by tradition and stuck in time than Portugal for food yet it is consistently considered atop world food rankings... Undeservedly in my opinion.

UNFORTUNATELY, the average person in the U.S has no appreciation for such luxury. Which means that the world of sandwiches in the U.S is in limbo. It will take years for the average person in the U.S to be like the Portuguese seeing their food as a national treasure.

    As a moroccan in my opinion portuguese food is one of the best in the world its a perfect balance between fresh and warm and faty food. We moroccans dont have many fresh dishes almost everything is very oily or very sweet or very faty and for me a perfect cuisine must have a balance and must be easy on the stomick. So thats why i love portuguese food and mexican , spanish , italian , lebanese and greek food very much
