Romantic Dreams is so damn good, first time I've heard it had to replay it like 3 times, the chorus is amazing I've been listening to Deftones for about 1 month now and the amount of incredible songs they have is surprising

Deftones make a simple-sounding riff become a wall of sound. Their use of dynamics is absolutely incredible. I don't hear their music so much as I feel it.
I genuinely felt high listening to this song when I went running yesterday. I know there’s a “runner’s high” but add this song and you feel like your eyes open, you feel that adrenaline kick in and the power that comes from it. The tempo is great for running. Music truly is magic to our brains.
The band was fighting a lot, in the midst of drug binges, and going over budget. As such, I think their suffering yielded their best album. This, and the self titled are the peak of the group I believe, with Chino still here, with them playing music drugged up, distraught and with no concern for it being radio friendly.
I love the way he sings "tonight" at 0:28 I listen to this song to hear that over and over. and I love the riff, the vocals, the rasp in his voice when hes singing, everything about this song is perfect.
I love the rift and the way the drums mesh into it. But I love how varied Chinos singing is. It goes from Soft harmony, to loud harmony, then to a chaotic scream, back to a soft harmony, then to pure scream. It's fantastic the vocal range in this one song. There's a little electronic effects here and there, but it's something beautiful that I can't compare to any other band.

Chino's voice is like a male lorelei, a hypnotic white mist.. It plays with your hair, glides between your eyes and dances in your ears, the drums and guitar strings vibrate within the walls of my temples, while I just stand there, in a trance, allowing his spectre to linger in the garden of my mind..
That is an amazing 3 song combo. Battle Axe just drowns you in the guitars and wails, Lucky You is Lucky You and Bloody Cape is simply one of my favorite songs of all time for obvious reasons.

Best Deftones album= ALL OF THEM! From Adrenaline to Koi No Yokan their sound evolved and not at any point was there sound bad. Chino, Abe, Steph, and the rest will forever have the creativity to produce music that will live forever!

But I'd probably say each of the albums (having their own sound and theme) is just as good as the others, in its own way. You can tell the progression in their sound, and appreciate every installment.
I've been a deftones fans for nearly 15 years now. Love all their albums except the self-titled album. It's got a few really good songs on it but I still haven't really warmed to it as an album after all these years.
