This is really the best keto croissant you can find that actually tastes good. A lot of them look good and claim they taste good but most of them turn out to be a flop, hard as rock or wet as a puddle. I am not a professional pastry chef but I made this and they turned out great and very tasty buttery and soft. Used a another persons recipe and made 12 layers of dough with butter in between and those turned out to be rock hard and tasted bad. The ingredients on this recipe are also definitively keto. I got kicked out of ketosis because I could not resist the croissant from costco and then I found this recipe. Ate 2 to 3 of these a day for a couple of days in a row, and I got back into keto. Don’t try any other recipe as they will waste your ingredients. Only caveat is that the dough for this recipe is very hard to roll out and I actually hurt my back 😂😂😂 for the next batch I’m enlisting my husbands help. Thank you for this recipe!
Hi, a few comments after reading some of the stupid ones here. 1. if you freeze the butter and use a grater it is easier. 2. They iz not keto, they gots gloooten (says the dumb@ss) Ahem, gluten protein is not gluten carbs, it is the protein in flour that binds things together, read a dietary breakdown before commenting 3. sort of like above but with the sugar/honey etc used for yeast. The yeast eats the sugars, very few are left for you to eat. 4. They take long time to make (says the same sort of person from above lol) Why yes they do. Here's an idea, don't make them, stick to eating pastry from a pop open cardboard tube and enjoy your diabetes. Good baking/cooking etc takes time 5. Make sure you buy 'sweeet' lupin flour 6. I don't know the maker at all, just see the same sort of stupid comments on almost any recipe 7. These durnt taste like the store bought ones (says same person lol) Of course they don't genius, they also don't have 80 grams of carbs in them so wake up.

Hi, not sure if you’re still experimenting but I find egg washing, sprinkling sliced almonds, then baking works. Also, shaping them rectangular (5x3) instead of a crescent allows for more filling. You can then pipe the filling in using a plastic/ pastry bag. Once cool, sprinkle with powdered sweetener of choice. Great job! the other recipe I’ve seen requires way more speciality items. This I know won’t compare to a traditional butter croissant, but I bet it comes close. Will try soon! 💜 🥐

Hey! Thank you so much! ☺️ Unfortunately it’s quite hard to replace lupin flour as it’s the ingredient that makes the croissants super soft. BUT if you type “Keto croissants” on google, there’s another recipe I wrote called “the best Keto croissants” and it doesn’t use lupin flour. It was my original recipe. So you can give those a try if you’d like! 🙂

Or as absolutely positively close as keto croissants can get. I can promise I’m my own harshest critic when it comes to Keto recipes. 😂
It's nearly impossible to exactly duplicate the taste, texture and mouthfeel of wheat without wheat. We can get fairly close, but we have to keep our expectations reasonable and get accustomed to no wheat.

Every once in a while, I will just have a cheat day…or cheat dessert…I figure if I am keto 99% of the time in the course of any given year…I can live with that.

I worked in a French bakery for 3 years, I also am just a perfectionist in general when it comes to baking. So I can promise, anything you’ve had that’s keto, will not be similar to my baked goods. (I worked with products that were brand new on the market, I had facilities all over Canada send me ingredient samples before they were released). BUT what I will say, is yes, totally agree with taking time off and eating what you like, I think that’s completely acceptable! Though, as someone who’s eaten many regular croissants and these, I still think about these ones sometimes, LOL. They really were that good! Even my non-keto friends loved them.
Wow this recipe takes 9 hours by your instructions. Requires an Amazon prime account for the ingredients, and a switch to hit the wife if she starts complaining about the kitchen being occupied or dirtied.
