LOVE IT. Freezer meals makes the difference between protein drinks or potato chips when I did not feel well. Now I have over 60 single serve meals in the freezer. (Beef and Rice in the crock pot tonight). I live alone. I am 82 and in a wheel chair. Freezer meals not only for families. I also have lots of foods I don't tolerate and I hate left overs. You are my heros!!
I have mental health issues and had breast cancer in November 2022. I had no energy to cook and we were eating terrible food - take out, frozen pizza, etc. I made the decision that as a retired couple we could move our main meal to mid-afternoon. Then I found Sharla and Christie. I started doubling recipes, then did a few recipes at a time, now I am always thinking “can I freeze that?”. For summer I prepped lots of proteins for the grill. Now that fall is coming I am getting ready to freeze marinara, stuffed shells, Barbacoa beef, etc. we will eat well this winter and I won’t e stressing. BTW my favorite is Philly Chicken sandwiches done in the instant pot. Mmmmm.
I love chatty Christie and Sharla time! So much to relate to. I homeschool my son. He is 16. I LOVE homeschool! But he went to public school until 6th. I started university (at the very beginning) at 32, when he was one. And I spent much of his life going to school. I went straight through to grad school and I was always so busy with homework and clinic, etc. But, like your mom, Christie, I have always cooked homemade meals. Even breakfast, because I didn't want to give him just cereal or sugary things. Then he got very ill in 6th grade and was sick for 3 years. I had graduated by then. But , then the homemade meals were even more important because I wanted him to have whole food to nourish his body. And we had to travel out of state regularly for his treatments. And that was only with one child. He is well now, and because it's just the two of us, I do mostly making extra I meals and I freeze them in glass containers that he can treat like TV dinners. At 16, he eats like a horse and so it really helps. I also recently did tje Carnivore diet for 3 months and the fact that i could cook a meal and then freeze it into individual portions for him was so helpful. As a single mom, it saves a lot of money too. And time.
Love this video:) I've been doing the doubling of meals, putting into souper cubes to freeze, then putting the cubes into the gallon zip locks and freezing. Beautiful!! This has been life changing. I literally have two instant pots. One for dinner tonight and one for freezing. If I'm short on time I make the first pot, get it started and then work on the second after I've done school pick up, etc. I've branched out and have started doing a few freezer meals at a time. I love the club! I love that I can easily modify the recipes or select the recipes that fit our allergy needs. It's so worth it! I'm starting slow because I want to make sure my family likes my choices:) My future goals include making some freezer meal lunches for myself. I enjoyed your talk of how you use the freezer meals for your own lunch:) I pack lunches from whatever we had for dinner the night before (Love those thermos canisters!), but there's not always enough for me for my lunch or I'm too busy with work to stop and make something. Also there are things that I like that my family doesn't so I only want to make a small batch for myself. Love your apron!
For the Mississippi Pot Roast I substituted a jar of canned homemade pickles(that needed to be used) for the peppers and my family loved it. In case some people don't like the heat they might try that, I think the vinegar is the important thing

We do have a chicken fajitas recipe (freezermeals101.com/sheet-pan-chicken-fajitas/) but yes, in general, a lot of the beef strip type recipes could be subbed out with chicken strips. You may need to adjust the cooking time a bit but the sauce should work.
