Since becoming a widow I have started freezing left overs. They are great for when I am unwell or just don't feel like cooking. I love making meals that feed a lot and take a lot of effort. I can eat it on the day, have leftovers the next day and put away 4-6 serves in the freezer for later. I can then enjoy it for weeks or months without having to remake it.
If you truly only want one portion at a time because a quart size bag is 32 ounces or 2 pounds which is quite a bit, are we able to use either snack bags or sandwich bags and fill them halfway up seal them fold them in half and put them inside a larger gallon Ziploc bag and make portions that way? For instance, I would put a bunch of Half filled sandwich bags with the shredded chicken and sloppy Joe mix seal them and throw them into a gallon Ziploc bag and maybe have 8 to 10 portions in there of the same thing?
That would totally work! We seldom fill them with a full 32 oz of anything and can be filled with less but you're right - there is always more than one way to skin a cat. :)
I like the dipper chips that way you could put everything inside the actual chip itself, but I think you’re right and they need a little bit of everything in each chip

I've made curried lentils before, but taking the shortcut of using prepared curry powder. Saute the onions, garlic, and ginger; once they're cooked soft, add the curry powder to warm the spices. Then add the lentils; if you want to cook them down to meld the flavors, just leave a little cooking liquid in. I never made soup out of them, but I do enjoy a curry with a little cream or coconut milk added. (Or a dollop of sour cream once it's dished out.) But it isn't necessary. I also like to make my not-chili with "chili flavored" red beans rather than kidney beans, which I am not fond of. Idk if all stores have them, but mine does. In fact, I think I have chili flavored beans, salsa, cheese, AND sour cream in my kitchen right now. That could be lunch....
In Canada I can't say I've ever seen chili flavoured red beans, let along chili flavoured sour cream! That doesn't mean it doesn't exist - I just haven't seen it here. It sounds interesting! I think that is probably a very good lunch! lol
@@FreezerMeals101 no, no, the sour cream is regular sour cream! (Wouldn't that be fun, though? I suppose you could add a packet of chili seasoning to it.... Hmm.... 🤔) The only thing that comes chili flavored is the beans. ☺

Sorry for your loss, I am also a widow and I do the same thing , I make to much food and eat it for a day or two and freeze it for work lunches.

I try so hard to make big batches and freezing but my sons have huge appetites and eat large portions if the food is available
