    폭신한 초코 시트에 오레오 크림치즈 크림을 가득 채운 초코 롤케이크를 만들었어요~
    초코 시트는 너무 두껍지 않게 구웠더니 더 잘 말려서 좋더라구요~
    윗면의 구움색도 매끈하게 잘 나와서 시트만 봐도 기분이 좋아지는 것 같아요~*^^*
    크림치즈에 오레오 크림도 넣고 부순 오레오 가루도 넣어 고소하면서 오레오의 맛이 많이 나서 정말 맛있더라구요~
    종이호일로 말아서 굳힌 후 시트 겉에 자국이 날 수 있는데 시간이 지나면 펴져서 매끈해진답니다~
    롤케이크 시트가 매끄럽게 나오지 않을 때는 굽는 시간이 짧아 충분히 구워지지 않았을 때 꺼내면 윗면이 잘 벗겨지는 것 같아요~
    크림치즈 크림이라서 오래 굳힐 수록 크림은 더 단단하게 굳는 답니다~

    ▶틀 사이즈 Mold size : 37.5cm x 25.4cm
    ▶재료
    달걀노른자 4개
    설탕 25g
    소금 1g
    바닐라익스트랙 4g
    식물성오일 (포도씨유 사용) 30g
    우유 50g
    박력분 55g
    코코아파우더 15g
    베이킹파우더 2g
    달걀흰자 4개
    설탕 65g
    크림치즈 170g
    오레오 크림 (오레오 5개 분량)
    설탕 25g
    생크림 100g
    오레오 가루 (오레오 5개 분량)
    ▶레시피
    1. 달걀노른자에 설탕, 소금을 넣고 섞고 바닐라익스트랙을 넣고 섞은 뒤 식물성 오일을 넣고 섞는다.
    2. 우유를 넣고 섞고 박력분, 베이킹파우더, 코코아파우더를 체 쳐 넣고 섞는다.
    3. 달걀흰자를 휘핑하다가 큰 거품이 올라오면 설탕을 2~3번에 나눠 넣고 휘핑해 부드럽게 뿔이 서는 머랭을 만든다.
    4. 머랭을 초콜릿 반죽에 조금 덜어 넣고 섞은 뒤 섞은 것을 머랭에 넣고 섞는다.
    5. 오븐 팬에 반죽을 붓고 평평히 하고 기포 정리를 한 뒤 170도 예열된 오븐에서 22~23분 정도 굽는다.
    6. 굽고 테프론 시트를 떼어내고 가장 자리를 잘라내고 짧은 쪽 가장자리 한 곳은 비스듬하게 자른다.
    7. 차가운 크림치즈에 오레오 크림과 설탕을 넣고 풀고 생크림을 넣고 뿔이 서는 정도로 휘핑하고 부순 오레오 쿠키 가루를 넣고 섞어 크림을 만든다.
    8. 시트에 크림을 올리고 평평하게 바른 뒤 말기 시작하는 부분은 크림을 조금 더 높이 쌓는다.
    9. 종이호일로 돌돌말아 감싼 뒤 냉장실에서 2시간 정도 굳힌다.

    50g Milk
    55g Cake flour
    15g Cocoa powder
    2g Baking powder

    65g Sugar

    Oreo cream (5 Oreo)

    100g Heavy cream
    Crushed oreo (5 Oreo)

    (My cake pan is larger than the one used in the recipe, so I sized up the recipe slightly. For reference, the one in the recipe is 37.5cm x 25.4cm which is about 15in x 10in, and my pan is 41.5cm x 30cm which is about 16 x 12in. If you want to use the original recipe, the instructions stay the same, but the ingredients have to be according to the original recipe that is listed in the description instead of what I write.)
    5 Egg yolks
    30.5g Sugar
    ~1g Salt
    5g Vanilla extract 
    37.5g Vegetable oil
    63g Milk
    69g Cake flour
    19g Cocoa powder
    2.5g Baking powder 
    5 Egg whites
    80g Sugar
    200g Cream cheese
    Oreo cream (6 Oreo)
    30.5g Sugar
    125g Heavy cream
    Crushed oreo (6 Oreo)
    The Cake
    1. Mix egg yolks, 30.5g sugar, salt, vanilla extract, vegetable oil and milk.
    2. Sift cake flour, cocoa powder and baking powder into the yolk mixture. Set aside.
    3. Whip the egg whites until firm peaks, gradually adding in 80g sugar.
    4. Fold a small amount (maybe like about a fourth) of the egg whites into the chocolate mixture.
    5. After it is fully combined, pour the chocolate mixture into the rest of the egg white mixture and fold it in.
    6. Pour into a baking tray already pre-lined with parchment paper(do not use wax paper) and spread out evenly. After spreading it out evenly, raise and drop it a few times to get rid of existing air bubbles.
    7. Bake at in an oven preheated to 170ºC (or 340ºF) for 22-23 minutes.
    8. After letting it cool slightly, remove it from the pan and place on a cooling rack. Peel the parchment paper from the sides and place another sheet of paper that is larger than the cake on top (type doesn't matter now).
    9.Flip it over onto a working area and peel the rest of the parchment paper from the cake.
    10. Cut a thin slice off lengthwise from the sides of the cake to make it even.
    11. On one of the shorter sides of the cake, cut a slanted piece off the side.
    12. On the side directly opposite the slanted edge, cut a thin piece off. Then, in short increments from the edge, cut slight grooves into the cake widthwise, making the cuts very shallow and stopping after about 7 or 8 cuts. Set aside.
    The Filling
    13. Mix cream cheese, oreo cream and 30.5g sugar. Add in heavy cream and slightly mix.
    14. Use an electric mixer to blend together the mixture more.
    15. Fold in the crushed oreo cookie.
    Assembly
    16. Spread out the filling on top of the cake evenly in a thing layer, taking care to push more filling to the side with the shallow cuts. Smooth this extra filling into a slightly raised mound, shaped slightly like a triangle.
    17. Starting from this side with more filling, slowly roll the cake forwards, holding it firmly as it rolls into shape.
    18. Use an object with a slightly pointed edge to push paper under the roll, which will hold it tighter, and then roll the rest of the cake up in the paper.
    19. This isn't shown in the video, but take the extra paper on the edges and twist tightly, which will ensure the cake doesn't open while being refrigerated.
    20. Refrigerate for 2 hours. (At least. More time in the fridge will only make it colder and firmer.)

    I just rebaked this recipe and the result....THIS CAKE TASTES REALLY GOOD !!! The sweetness level is just right, especially for a non-sweet tooth person who loves cake like me.     made this today and it was great,,, tasted great, texture was so fluffy and overall 10/10. only issue was that I didn't use the cream cheese filling as i was missing cream cheese at home so i just made a whipped cream filling and added around 10-12 oreos in and it tasted great. highly reccomend.

    I just made this but i didnt like the oreo and cream cheese filling so i luckily had enough cream to just whip up with some vanilla and icing sugar. The actual chocolate cake was a success so thank you

    May I ask do you remove the cake out of the tray, flip over and take the baking parchment off when the cake is warm or cold? I wonder why the ‘skin’ on the top of cake still stay on perfectly. Many thanks.

    Don't have teflon sheet, so I tried using baking paper. However, the roll cake got stuck to the paper.
    Is there an alternative? Or, should I spray some cooking oil on the baking paper before pouring in the cake batter?

    Sadly, I can't roll it. I try, but the surface is wet. I don't know why, so I just crushed it and make it into cake in jar. But the cream it's sooo good
