Some people here keep commenting about the "dugyot" part which is reasonable to rant naman. But hey, that's a price of eating streetfood. What do we expect? It's up to us na customer kung bibili tayo o hindi if we found the store area unappealing and disgusting.
But on the serious note, if you think that's dirty because of the "visible kadugyutan." Then, do you think the food that was being prepared for you in various restaurants and foods stalls in malls eh totoong malinis at walang halong kadugyutan? I worked in diff. F&B establishments so I know how's the dirty dishes on the other side. HAHAH

It's great to see other provinces reinventing the cultural dish of Pampanga, but the classic would always be my favorite.

Pwede lutuin ng kahit anong parte ng baboy, basta walang taba, patayin kagad apoy at ichop chop, Tapos di tlga dapat niluluto ang sibuyas. Niluluto lang dapat ang baboy plus na may konting asin, paminta, toyo, tapos patayin kagad ang apoy, at saka haluan ng hiniwang sibuyas na parang hinaluan ka lang ng salad plus sliced siling labuyo o berde pati isqueeze ang kalamansi/lemon. Yan tlga ang pinakaorigin tlga ng sisig na salad talaga sya ayon sa Kapampangan dictionary. Kapag mas maraming freshly diced "raw" na sibuyas (mas masarap kapag sinabayan mo ng sibuyas na pula at dilaw), mas masarap, never ever dapat niluluto ang sibuyas kaya yan tlga ang nagpapasarap sa sisig
For those who dont know what sisig is its the headpart of the pig. Its unhealthy because it contains alot of oil but if youre into trying foods i definitely recommend this for you because its so yummy youll forget that its a pigs head.
