How to make Kritika Paximadia (Cretan Biscotti)

- Yiayia Anna was born and raised on the island of Crete. When she was 27 years old she immigrated to America and settled in Boston.
For my entire life, Yiayia has regularly made paximadia for her family to enjoy. It wasn't until recently that I realized I had no idea how to make these cookies.
Today we are joining Yiayia in her kitchen to learn how to make Kritika paximadia (Cretan biscotti).
Recipe:
6-8 cups flour
1 cup of oil (half olive / half vegetable)
1 cup of butter
4 eggs
1 cup of walnuts
1 tsp vanilla
2 cups of sugar
3 tsp of baking powder
1/2 tsp baking soda
1 tsp of cinnamon
1/2 tsp of cloves
Egg wash:
2 eggs
Pinch of sugar
Splash of milk/water
1. Preheat oven to 350°.
2. Using a mixer, combine oil and butter
3. While waiting, sift flour and set aside
4. Add sugar to mixer
5. Separate 4 eggs - whites and yolks - whip them separately and add to mixer
6. Chop walnuts and add to mixer
7. Combine 1 cup of flour, baking soda, baking powder, cinnamon, and cloves - then add to mixer
8. Add vanilla
9. Slowly add half of remaining flour to mixer
10. Once the mixture is smooth, pour it into a large bowl. Stir the mixture with your hands while gradually adding in additional until the dough is smooth and firm, but moist. Sort of like mushy cookie dough.
9. Put parchment paper on a cookie sheet. Make small loaves and place them on the tray, cutting off the ends and scoring them
10. Whip 2 egg yolks and brush the loaves
11. Bake them for 20-30 minutes, and then remove them when they are firm.
12. Cut them into pieces along the scores that you made.
13. Bake them again, but on their sides this time. Check them after 10 minutes, or until they are crispy. Then, flip them onto their other side and bake them for 10 more minutes.
14. Let them cool, then eat all of them, and start from step one.
