- 咸味手撕泡泡面包
180g 冰牛奶
150g 淡奶油/鲜奶油
35g 糖
4g (1.5tsp)速溶干酵母
400g 高筋面粉
20g 奶粉
6g (1.5tsp)盐
一点融化黄油(用于刷烤盘及面包)
1)把全部材料一起入厨师机或面包机打光滑,收圆后28度左右发酵一个半小时。
2)发酵好后排气,切割成很多很多小面块。大致收捏圆。收口向下放在刷了黄油的烤盘上,不需要排列整齐。盖起来再次发酵至明显膨胀1.5倍大。
3)刷一层牛奶或蛋液,入预热好160C摄氏度烤箱烤25-28分钟。
4)烤至金黄出炉,根据个人喜欢可以刷一层黄油在表面。
(趁热时需要脱模放凉,防止底部产生湿气哦)

400g high-gluten flour/bread flour
20g milk powder
6g (1.5tsp) salt
A little melted butter (for brushing the baking pan and bread)
1) Put all the ingredients into the mixer or bread machine and knead until smooth, and ferment at about 28 degrees for an hour and a half.
2) After the fermentation is complete, the air is exhausted and cut into many small pieces. Roughly rounded. Place it on the buttered baking tray with the seam side down, no need to line up neatly. Cover it and ferment again until its size up to 1.5 times larger.
3) Brush a layer of milk or egg wash, and bake it in a preheated 160C oven for 25-28 minutes.
4) Bake until golden brown, and brush a layer of butter on the surface according to personal preference.
(When it is hot, it needs to be demoulded and let cool to prevent moisture from being generated at the bottom)

Hi, milk powder only adds more flavor to the dough, without it the dough works just fine.

We do the same, but we put a piece of cheese inside and after baking it we sprinkle honey on it

也可以,不过淡奶油有油脂,牛奶少。都用牛奶的话建议额外加一点黄油或植物油效果好一些(加20克左右)。

请问老师把面团放在烤箱里发酵时,烤箱是几度?是否一直开着电呢?
第一次发酵时我一般放烤箱,开着28,30摄氏度这样(或者直接开烤箱的发酵功能),让它发酵一个半小时。二次发酵时也是可以温度改到35摄氏度这样,发20多30分钟。

Yes,you can add more sugar (to 80g) and reduce salt(to 2g) to make sweet version.

不同厨师机打面效果需要的时间不太一样。一般打出膜需要十来分钟吧。
