    Hi everyone! I’m a New Orleans Native and just wanna give a huge shout out to Mr. Andrew’s here for sharing his recipe with all of us. I’ve been making Jambalaya for a longggg time and I’ll tell y’all right now… this is the one. The technique described by Mr. Andrew’s is one of a kind and unmatched. Go ahead and use your old recipe because you think “this” and “that”-nahhh. Boo, Tomato tomato tomato-wrong. Start using this one. Will never disappoint those who get a plate of this. 10/10

    Hi Charlie. I’m a native N’awlins gal. I grew up with the best N’awlins food, cooked by the best N’awlins cook, my Daddy. My Mother (Miss you Ma.💗) never cooked. Daddy didn’t have patience for us kids to be in his kitchen, so we didn’t learn. As I grew older, I learned to cook some things, but I am not a great cook. Well Daddy is 94 years old now and lives with my husband and me. I am always under stress to feed him, because he wants my food to taste like his, and it never does.
    Well I watched this video, and because you are so thorough about each step, I decided to try it. I am so excited to say that for the first time EVER Daddy told me three times how good it was! Pleasing my Daddy is very important to me. I can’t thank you enough for this video, and I look forward to trying more of your videos! Please keep them coming. God bless you Charlie! 🙏❤️

    I live in New Orleans, and this is exactly how my Grandmother taught me to cook jambalaya... No stirring at the end....perfect every time!

    I am writing for my lady. We just did this recipe and loved it! We had chilli powder instead of cayan and didnt use pork, however this meal was by far the best jambalaya we have ever had! We totally recommend Charlie's recipe.

    Looked all over RUclips to find a Jambalaya recipe. Found this recipe and ran out to get all the ingredients. This recipe had my Georgia kitchen smelling like aCajun kitchen for sure. This was the best Jambalaya I have ever tasted. This was my first time ever making this dish and you had me cooking like a Pro. LOVED IT.

    Also when you don't stir the rice it develops that nice fond (crispy rice) on the bottom which is absolutely, my favorite part!

      @@CharlieTheCookAndrews , You are so welcome. I've been watching your channel because the holidays are approaching. I never really learned how to properly prepare these meals. I was born in New Orleans, but raised in California. Both of my parents are from New Orleans. My entire family, both sides (father and mother) go back many generations in New Orleans, so you would think I should know how to cook as well as you do. My mother and father were great cooks, so we never had to go out to dinner. I lost my mother this past summer and my father past away 7 years ago, so I can't go to them for tips on cooking. Thanks to you, the little I've learned from both parents, especially my mother, it's all coming back after watching your videos. This is my first holiday without my mother. Although it's just me by myself, I want to make the best of it. Thank you so much Charlie for sharing your videos. God Bless You.💖

    I Grew up in Mobile where jambalaya is Seafood PERIOD. Now I live in the arid basin and range, so No shrimp, but still crave jambalaya. I Thought I had chicken and sausage Jambalaya down...NOT but I will have when I try this recipe. Charlie THANK YOU!!!!

      p.s. locally we have wild rice crops...so using brown rice cut 70/30 with wild rice gives a nice twist to plain white rice. It's sacrilege but it is GOOD.

      Charlie Andrews Hi Charlie. I made an attempted on Thursday. I managed to get some creole seasoning. I used regular chicken seasoning instead of your poultry magic. It turned out well as the whole family devoured it and would like it again. My eldest son said I should have started that 15 years ago. But we aren’t Louisiana natives and so I don’t know it should turn out. I do have relatives in Baton Rouge. Maybe when I see them one day I will try it out on them. Thanks for your recipe. I will be attempting again next week. 😀

    What a wonderful dish!!! I made this for a pre-christmas day dinner and it was voted best in our family compared to the other dishes brought to the table. My mom was jealous as it beat her home made lasagna!! But I think she loved it the most. I added local shrimp in the last 5 minutes of the rice cooking portion. The taste is fantastic. Worth all the prep time! Thanks!

      You can completely omit it from the recipe. It'll do just fine without the poultry magic.

    God Bless you, I just came back from New Orleans and had Jambalaya and it was AMAZING! I'm biased but when I was down there the restaurants that had a lot of black people working there, the FOOD was way better! God bless!

    Started about 6pm. Finished bout 830p. Preparation I now know adds to your time. Followed you to the “T” adding my twist of shrimp and some smoked 🥓. I’m from Trinidad so we like the spice added in...😁 let’s say, instead of you hitting your fist on the table, my adult kids and their friends had a “Drumline” going up in here.       LaShawn Washington He lists an alternative by using Tasso turkey in the top comment. He also has a shrimp alternative as well. It also has a link. Charlie is awesome!

      Hello LaShawn. I understand that you don't eat pork but there are other things you could use besides pork. Instead of using the tasso pork, you can use the tasso turkey. I have the website link in the description box where you can purchase that. You can also use chicken smoked sausage where you can probably find at your local grocery store. Thanks!
