I just made this and OMG is it good! I used some more spices but overall was about the same as the video and it’s delicious. Never had pickled red onions before but i’m so glad I made them! Definitely recommend this recipe!

This dish reminds me of the "epic rice" one I make - Kale and all. And let me give you some tips on eating the disgusting (yet very nutritious) kale! 1) Small-dice up the leaves instead of just big clumps. I give them a fine chop until they're about half the size of my fingernails. 2) put them in RAW into the bowl, and let the hot ingredients you add in later do the residual 'cooking' 3) Stems! Don't waste them! Fine-slice them and pop them in with any stir-fry. They soften up and add fiber!
I was a little hesitant about this meal, but gave it a shot because Josh has never led me astray. Boy am I glad I made it. The pickled onions really make this dish but overall super good.

Just so you know, you can speed up your pickling process by bringing the pickling liquid to a boil, adding the red onions to the mason jar, then pouring the boiling pickling liquid into the jar. Allow it to come up to room temperature while you're doing the rest of the meal prep and you'll have perfectly pickled red onions on the spot.

If you have the extra cash, highly recommend substituting the white vinegar with apple cider vinegar. Add in some whole peppercorns too. They make pickled red onions even that much better!
For the pickled onions, don't use white vinegar. Use another vinegar. Rice vinegar, apple cider vinegar (the clear Heinz type), etc work wonderfully. Same recipe tho. Hidden veggie tip: steam the kale. Stuff steamed kale plus a bit of water into a blender and puree it. Add pureed kale into ice cubes and freeze (line ice cube tray with plastic wrap to make kale-ice-cubes removal easier). Whenever you do a meal prep, add a cube or two of the kale-ice-cubes. It's an easy way to add a bit of hidden veggies and the kale just looks like some sort of green herb. I've never been able to taste the kale this way.

If your making a good sauce, cutting it with some of the pickle juice instead of the water for a little bonus flavour. Yes pickle liquid had sugar/salt but it's such a small amount compared to how much flavour you get from it..

im on the edge for making this meal. just purely because there is so much fat in it, I'm not sure if it is because of the sauce or it is healthy fats? is there any way I can cut down on the fats? love the videos man
I put the ingredients into a calorie calculator and, FWIW, with the inputs I used and the way it calculated it all, the fat was cut in half by not using the mayo. Your mileage may vary...
Thank you for being the only meal prepper that gives an honest opinion on Kale. I used to eat grass and clovers as a kid, but kale is 🤢. But I know it's good for me and I need to eat it more often. Maybe this will help me get some more veg in my diet. That's what I want out of meal prep. More veg. But my store also hates kale because it only comes in one big bag so if I want some I have to give some to my brother too (he's a weirdo that actually likes kale). Also. What cooker setting for the quinoa? I only have white, brown ans wild settings for my rice cooker.
I hate quinoa as much as you hate kale. Quinoa deceived me the first time I had it at a friend's house. I sat there eating it, assuming it was rice. It felt/tasted all wrong. So I assumed it was pasta. Still wrong. Then I realized it was neither. Hm, maybe it's my friend that lied to me! :) I would love this with rice. I'm not sure I've ever had pickled onions. Sounds fantastic!
In the part of the world I live in Turkey can be pretty hard to get - any recommendations for the next best meat to use for similar flavour and/or nutritional values? (I'd assume chicken but please correct me/give other yum options if anyone has any suggestions)
TBH, the time-saving aspect is why I prep most of my breakfasts and dinners too. After 9 hours in the office (plus commute time depending on if the wife is working in-office or at home), I only have a few hours awake, and I don't want to spend that time deciding what to eat.
Would it even pickle correctly? I can't imagine the sugar used in the onions would be particularly egregious to any diet, only some makes its way into the onions, and I doubt you'd eat a whole medium onion in one day. If it is a matter of having it in the house, 4-5 sugar packets from a coffee shop would be plenty for 1 whole onion.
You technically don't need at it all but I'd recommend keeping it. It adds a trivial amount of sugar to the final dish (like less than 1g per serving). Even if you are trying to limit sugar/fructose in the diet, this isn't the place to cut it.
@@SaturninePlaces yes, it would pickle correctly. When I make pickled red onions, I typically do equal parts vinegar and water with a bit of salt, then bring that to a boil before pouring it over. Sugar isn't specifically necessary, just affects the flavor.
I prefer my Kale prepared the traditional way, as a garnish and uneaten. I'll make this with spinach or possibly even brussel sprouts.

Why not substitute Barley? It’s got less protein compared to quinoa but more than rice and tastes similar to rice imo
