  • Pad See Ew with Beef is a popular Thai stir-fried noodle dish. It features wide rice noodles cooked in a savory, slightly sweet soy sauce, with beef, Chinese broccoli (kai lan), and eggs. The dish gets its name from the "dark soy sauce" ("see ew" in Thai), which gives the noodles their distinctive caramelized flavor.
    Ingredients:
    8 oz (225g) wide rice noodles (fresh or dry)
    200g beef (sliced thinly, flank steak or sirloin works well)
    1 egg
    2-3 tbsp vegetable oil (for stir-frying)
    1 cup Chinese broccoli (kai lan) (cut into bite-sized pieces, stems and leaves separated) if you don't find it tendersteam broccoli works .
    2 cloves garlic (minced)
    For the sauce:
    1½ tbsp dark sweet soy sauce
    1½ tbsp light soy sauce
    1 tsp oyster sauce
    1 tsp sugar
    1/2 teaspoon white pepper
    For side sauce:
    1 tsp white vinegar (optional, for a bit of tang)
    2 Thai chillies
    Procedure:
    1. Prepare the noodles:
    If using fresh wide rice noodles, gently separate them. If using dry rice noodles, soak them in warm water for 20 minutes until soft but still firm, then drain and set aside.
    2. Make the sauce:
    In a small bowl, mix together the dark sweet soy sauce, light soy sauce, oyster sauce, sugar, and white pepper, Set aside.
    3. Marinate the beef:
    In a bowl, mix the beef slices with 1 tsp of soy sauce, oyster sauce, egg White and a pinch of sugar. Let it marinate for about 10-15 minutes while you prepare the other ingredients.
    4. Stir-fry the beef:
    Heat 1 tbsp of oil in a large wok or skillet over medium-high heat.
    Add the marinated beef and stir-fry for 2-3 minutes until it's browned and cooked through. Remove from the wok and set aside.
    5. Cook the garlic , egg and broccoli:
    In the same wok, add another tablespoon of oil, then toss in the minced garlic and stir-fry for 30 seconds until fragrant.
    Add the egg and cook it, then the broccoli stems and stir-fry for 1-2 minutes until tender, followed by the leaves, and cook for an additional minute.
    6. Add the noodles:
    Push the vegetables to the side and add the remaining oil. Add the noodles to the wok and stir-fry them gently to heat through, trying not to break them up too much.
    Pour the sauce over the noodles and toss them quickly to coat them evenly. You should see the noodles darken and start to caramelize from the soy sauce. Add the beef back and your Pad see Ew are Ready!!
