Alright some tortilla tips from a Mexican senora: 1) roll the dough into little balls, that helps with rolling them out round 2) don't flip the tortillas that much when cooking and we press them down to make sure the entire thing is cooked 3) when they start to puff up flip them and push down on the bubbles to make sure they keep cooking evenly 4) they should not have any "clear" looking spots, that's how you know it's cooked 5) Enjoy!

I'm Hispanic and the baking powder is what makes them soft. If you did another fat but used baking powder you would love them too. The baking powder is what makes all the difference. I'm not sure if I saw you put salt in the tortilla mix? But that's an important ingredient as well. My family always made tortillas with lard and they would make three dozen tortillas from mix to cook in one hour.. whereas I'm much slower. Lol

I fold flat sheet first , half, then half again. At this point spread out and smooth. Put corners in corners 2 and 2 then put those all inside one corner. Fold long edge into thirds on top flat sheet. Now take pillowcases fold in thirds long ways. So you then have flat sheet on bottom fitted next and pillowcases. Take a moment smooth. Fold about 12 inches in and then one more fold. Perfect and finally tie aside ribbon around. They are kept neat and tidy.

Remember when you were harvesting your winter squash at the old house & you mentioned researching some new recipes for butternut squash. Thought I'd mention one of our favorite recipes is Jamie Oliver's butternut squash muffins. They have olive oil as the fat, chopped walnuts & taste very similar to carrot cake. They have a glaze made with confectioners sugar, little clementine (or mandarin orange) juice & zest. They're simply to die for & a perfect breakfast muffin, desert or snack for fall, spring or really anytime of the year.

Love everything you do. You've inspired me so much since I found your videos a few months ago. I go through a lot more flour these days haha and we can't get Italian sausage in my country so I made it from pork mince and added the spices.... currently our favorite meat

Homemade tortillas are the ultimate comfort. So delicious. I make them the same as this recipe, with vegetable oil, and they come out super soft. The only difference is that I separate and roll into balls before resting the dough and that makes rolling them a dream. No shrinking because the gluten is so relaxed.

Hi Becky! When you make flour tortillas wait for the tortilla to bubble a bit before the first flip/turn. The puffing up is what cooks the "inside" of the tortilla. It's best to let the turn "bust" the bubbling but you can gently press on them to insure even cooking.

Mexican here.....Always use Lard for flour tortillas. If you want a substitute then use Crisco. Never use oil, especially olive oil.👍 The softness comes from letting your dough rest and also letting the dough "patty" rest again. The hot water will melt the Lard or the Crisco Shortening. That what helps in rising and this happens so fast as soon you press down in the middle . Also pan needs to be preheated to super hot first then can be turned down to medium heat. 🥑
