Pumpkin soup 🎃

  • Ingredients
    - 1 butternut pumpkin, quartered
    - 2 tbsp olive oil
    - salt and pepper to taste
    - 1 tbsp sumac
    - 1 large onion, diced
    - 6 cloves garlic, diced
    - 1L chicken stock (or veg)
    - 50g butter
    - 50g pine nuts
    - parsley for garnish
    - 1 tbsp cream (optional)
    - toast to serve
    Method
    1. Place the quartered butternut onto a tray, drizzle with oil and season with salt, pepper and sumac. Roast at 180c for 40 minutes or until cooked through and the flesh is soft.
    2. In a large pot over medium heat, pour in the olive oil. Once hot, add the onion, garlic and some salt, and saute for 3-4 minutes.
    3. Once the pumpkin comes out of the oven, scrape the flesh out and place it in the pot with garlic and onion.
    4. Pour over the stock and simmer for 10 minutes before you blend with a stick blender (if you don't have one you can just use a masher for a chunkier soup).
    5. Toast the pine nuts in the butter until golden and finish with the parsley.
    6. To serve, add the soup to a bowl and garnish with cream, pine nuts with parsley and serve with toast on the side.
    7. Enjoy!

      @@dreichert1438 well, to be fair, Australia does have some pumpkins that the US doesn't and vice versa. Also, all pumpkins are squash but not all squash are pumpkins.

      @@dreichert1438 in many other countries “pumpkin” is a term which I think generally means winter squash but usually specifically butternut squash. I think America is unique in naming one style of winter squash “pumpkin.” When we visited Australia in October 2011 our Airbnb hosts were preparing to leave for a pumpkin carving party, and their description of it was “we’re going to be hacking up a pumpkin.” If you imagine them associating pumpkin with butternut squash that’s a pretty funny picture. After they went it all made so much more sense to them.

    We call these Winter Squash here in New England and roasted or just boiled and mashed as a colorful alternative to potatoes, they are one of my favorites!

    Try steaming the Pumpkin with Bacon Rashers on top gives the pumpkin the perfect salty taste and cooks the bacon perfectly

    It’s definitely butternut where I come from, I add some sweet potato and green apple to mine and roast them altogether, it’s yummy!!

      That sounds like a great addition! Any details you'd care to share on your definition of a touch, and maybe how you add the pear, would be appreciated. I could see about anything from fresh pear to baked to a drizzle of nectar contrasting with the creme fraiche. Thanks for the tip!

    Most canned “pumpkin” in the US is actually butternut squash, as the two are botanically similar, and butternut tastes better.
    We have a variety here in northern IL called “honeynut” that’s even sweeter and smoother-textured, and smaller so it’s easier for a smaller household to cook & eat!

    I use yoghurt rather than cream, like the sour offset. Making chicken stock from left over roast adds to the adventure. Roasting the pumpkin will add to the flavour, will try that. Love the show!

    We call those butternut squash here in Canada. 🙂
    But it still looks really yummy for when our winter comes. We're the opposite here in weather, it's our summer right now.

    Andy roasts the pumpkin a lot further than I do. I'll have to try that, I think you probably get more flavour out of it. I do use garlic olive oil on the pumpkin, though, and that definitely makes a difference.

    In America we call that a butternut squash, pumpkins are round and orange( white or green if u get the fancy ones) regarless, that soup looks delicious...and is probably better like that then a "regular" pumpkin
