You're absolutely right that it would be inappropriate to have personal relationships with staff. It is more kind for her to allow them to keep their professionalism and thus their jobs.

It's really interesting hearing about how the Queen is relatively traditional in her food choices, but Prince Phillip is more adventurous and loves to try new things.

I tried to focus on his story, but my eyes kept seeing his hands chopping the mushrooms beautifully and effortlessly. Honestly, it took me 5 minutes just to peel and chop garlic.😅
gaby. riela Peeling garlic is easy. Just twist at either ends! It’ll come right off in a second!
gaby. riela: my eyes were watching the fire on the stove, amazed that he was so nonchanlant about the whole thing. I know... he's done it a 1000 times and nothing burned down.
put it on a flat surface and press, slightly crushing it - it with a knife. Skin comes right off. Use your fingers to guide the knife (you shouldn't rely on your eyes).
If you really want to become 'good', just chop dozens of onions. It's how these chefs learn it, when they first start out: ''chop these onions". Such places work in bulk and practice makes perfect, especially when done repeatedly in a short time. It used to take me long too, I was too focused on the actual knife and applying pressure in the wrong way, without really slicing enough (too much downward pressure). And I didn't use my other hand to guide the knife, I just used the cutting hand to move it after each slice. Bla, bla.
One more tip: I use a meat cleaver for the garlic and when I need it chopped, I rather just do the same trick again: put it on a flat surface (now without peel) put the blade on top and slam my fist upon the blade with great fury. Instant garlic puree within seconds.

Yeah, I was mesmerized by his mushroom cutting as well. For garlic, just slice off the root and then press with the side of your blade and the peel comes right off.
@camille is right. The single most important cooking tool is a well made, sharp as shit chef’s knife. Well worth the investment.

I was a Buckingham palace guard with the army a few years back. The guardroom where all of us soldiers stayed has it's own chef, a 'very friendly' French man who made us amazing food (which is rare in the army). He would bring us cakes and donuts and all sorts, the best food I ever ate in the military hands down.
Thank you for sharing :) my military time, the best food I had was some cheesy jalopeno sauce with meat scraps and pasta, probably tasted better because we spent all day in the forests, but in general the food tasted pretty weak. What do you expect anyways :)

I approve wholeheartedly of the Queen's choice - especially venison which is much underrated and sadly not as widely available as it should be. Darren relates enjoyable anecdotes but remains respectful which is all one can ask for. Whatever one thinks of there being a monarchy, on the whole most of the Royal Family seem to be nice people to work for.

This is my fave, as well. Using cognac. Lovely deep sear on the beef, but medium to medium rare. It’s the sear and the sauce here. Boeuf Tournedos is akin, using tarragon in a Bernaise instead, and served on crispy fried in butter, thin bread rounds, the size of the tenderloin and placed under it. Delicious!

I Love this story of how he just decided, to apply and then got the job, it really pleased me to listen to everything.
I'm surprised to not find anybody that transcripted the recipe here. Here it goes as I was able to catch it:
Ingredients:
6 mushrooms
2 beef tenderloin steak medallions
5-6? potatoes, enough for mashed potatoes
2-3? parsnips, to add to the mashed potatoes
1 stick of butter
1 & 1/2 cups of cream
(optional) about a quarter onion chopped
1~ 1 & 1/2 cup of whiskey
~1 cup of meat broth (?)
Preparation:
- Mashed potatoes
a. After cooking and chopping the parsnip and potatoes, mash both separated.
b. Add aprox 20g of butter to the mashed potatoes and around 1/2 cup of cream to the parsnip
c. Mix both the parsnip and potatoes together, add salt to discretion and store for later
1. Chop the mushrooms into medium thin slices, keep for later
2. Season the medallions using salt and pepper, keep for later
3. In a heated pan put some cooking oil followed by ~10 grams of butter. Place the medallions in the pan and sear properly.
4. Cook the steaks to medium rare as god intends. Please, respect the cow that gave its life for this beautiful steak.
5. After cooked to medium rare, remove the steaks and let them rest in a plate. Keep the juices in the pan.
- Sauce
6a. In the pan you just cooked the steak, add 10g of butter and mix with the juices
6b. Add (or not) the chopped onion
6c. Add the mushrooms and mix in the fire for a couple of minutes
6d. Add the whiskey and mix, "Ooh fire!"
6e. Add around a cup of cream
6f. Add...meat broth?
6g. Reduce until a dense consistency is achieved
7. Add the steaks back to the pan with the sauce and mix it. Let it sit while you plate the mashed potatoes
8. Plate! A big spoon of mashed potatoes as bed, one steak on top. And baby carrots as a garnish
9. Enjoy your beautiful medium rare steak!!!!!!! And sauce.
Also, side note. Delish, or chef Darren. Please don't sue me if somehow I am infringing some copyright by writing this down. I am doing it for fun and to maybe help someone get creative in the kitchen :).
EDIT: I tried it at home and a big observation to make is *go hard on the salt* The Sauce can be a bit too bland so compensate by making the mashed potatoes slightly salty. Also, damn that sauce is good.
