Burdock root is a popular vegetable in Asia, especially Japan. The long thick root is starchy and gets a crunchy texture. It can be used for stir frying or pickeling. Maybe try it out, your farm burdock may turn out a very useful plant.
My grandparents grew burdock for the roots. In summer they cut off most of the purple flowers to control the spreading of the seeds. A few flowers they let go to seed and they harvested those seeds. The patch was well controlled. All of the roots were harvested in late fall. The roots were used for many products. The flour from ground burdock was treasured by them.
