Could you maybe add a couple of custom fluids, add recipes to craft them with create, and then add a squirter recipe to fill the mugs? Then you could make a set of create beer taps behind the bar and it would be super cool!
I like that mod quite a bit, but even its advancements are a bit of a mess. When digging through its files earlier this year, I remember finding out that they'd "fixed" the broken all-other-advancements advancement by replacing its condition with... Just getting/placing down a netherite brewing station, I think. And don't even get me started on the *food*

How about making a “Bottle of Beer” item, and you can combine a Bottle of Beer with three or four empty mugs to get an identical number of filled mugs? That should be enough to automate the brewery mod, and stays fair if you make the Bottle of Beer a non-functional ingredient by itself.

I know of a really cool mod you may be interested in that will let you hide your armor without it reappearing, the mod is called Figura and alongside hiding your armor you can also add custom animations and parts to your character, for example ears that aren't 2D pixels on a skin. If you'd like I'd be happy to make the model for you if you're willing to send your skin file.
You know, I think that it wouldn't be so bad if they just added an instruction manual item. Just something you can craft in your inventory with a book and some hops or something. I like the slow pace of Vanilla Minecraft, where you spend time doing things while waiting for things. I would probably enjoy doing the little brewery game while smelting this or waiting for that to grow, it just really needs an in-game information resource. Hopefully they see this video and its comments and use them as ideas to improve the mod.

It gives you the ability to individually toggle your armor slots off with a little chestplate icon next to your character in the inventory menu or you can throw on armor that has no function and just looks. Meaning if you wanted to wear a straw hat without the armor penalty, you can wear a netherite set of armor in your main armor slots and throw a straw hat in your cosmetic slot, then toggle your chest, legs, and boots off so that only the hat shows up. EDIT: This mod is only for Forge/NeoForge apparently, so if you're fabric (I can't remember) then it won't work, but if you can somehow run both then I'd recommend this mod 100% of the time.

The [Let's Do] Fluids compat mod will help, but it doesn't yet support Brewery. Beer has nbt data which the Addon mod doesn't yet have the ability to add via create. Recommend including that when you get to winemaking for sure though.
I thought I had the brewery mod on a Fabric server with some friends and I remembered it being less-than-friendly for automation (alongside Vinery, because I never found a way to automate grape juice for Vinery, gotta stomp the grapes yourself, though you *can* put grapes into things and pull the juice out via deployers, built a whole machine to do that), but it was never so minigame intensive (you just slapped the ingredients into a barrel and let it sit). Can't tell whether they just updated the mod and decided to make it awful when they did so or if there's another mod that does the same as brewery but without the clicking minigame.
They need to remove those little one block spots of lava now that ancient debris is a thing you need to strip mine for its an annoyance more than anything
If the [Let's Do] Brewery mod isn't working out for you, there's always Brewing & Chewing. Not sure if it would work in your modpack, but it would definitely be more automate-able EDIT: Am remembering that it doesn't make a liquid, your keg gives you the drink already in tankards. So even if it fits in it won't be a big tank of beer. But otherwise it would be a lot easier than that machine nonsense lol
Does the beer brewing station output any kind of redstone signal? Either directly or with a comparator? Cause of so, maybe you could automate it with deployers? If you could detect when it needs fuel, say, a deployer could switch on and use coal on the furnace corner?

You could probably make it so when you add the ingredients and an empty beer mug in a mixer with a blaze burner it would mix and give you a full beer.
You COULD make a Create Addon that can automate beer brewing from Lets Do Brewery instead of having to do that quite frankly tedious minigame

There's a small QOL thing for create minecart contraptions - if you left click the cart it places the items without need a cart assembler.

Brewin and Chewin is 1.19.2 and forge only, this modpack is 1.20.1 and fabric.
