I definitely appreciate the added protein, but it makes them quite rubbery, to the point they even get hard to cut at times after they start cooling a bit. This recipe definitely needs more flavor for me too, at least using honey, but the protein content is absolutely perfect. With two waffles and my usual fruit and PB toppings, I'm good until lunch, when I'm usually starving. I will play with adding more fat and making some other changes for tenderness. I say add a TB or vanilla for a 1.5x recipe. I used banana rather than applesauce, so I don't know how that changed things. I really appreciate this high protein recipe option. Protein level here is on point!
I like to make large batches of waffles on a day I have time, then freeze them in bags with parchment paper between them so they don't stick to each other -- then TOAST in a regular toaster or in a toaster oven when you want to heat them -- makes them crisp, like they were just made!
I came here (again) to comment (for the third time) that these waffles are just perfect. I used cane sugar instead of syrup (since i don't have much syrup at home right now), in the batter and it was still good. In fact, im eating some with no syrup or anything right now! Very lightly sweet, just enough :)
Just made these for my 17 year old who's into the gym stuff these days, and an extremely picky eater, according to him they where really nice. I made the rest for myself and they actually are really good.

Never use cooking spray to lubricate your waffle iron. Use oil or butter. The propellants and cooking spray will actually start to erode the nonstick surface

This recipe sounds wonderful - except the cornstarch. I avoid any corn products in my diet as most corn is genetically modified. I will swap out with an alternative starch!!!

I used tue same recipe to bake a cake and it came out great as well. This is my go to recipe, as it is super high in protein without protein powder.

Well, melted butter (2-3 tbsp) would be fine, but to keep calories in check I suggest you use pumpkin puree or sweet potato.
