Maybe about the size of a pea or a little smaller then serve it with the capers, onion etc....on the side so people can add it as they go. I make tartare alot and I suppose it can be made different in different parts of the world but just about every video I've ever seen shows it diced up. This you may as well just put ground beef on the plate and save all the trouble.

Should have removed and replaced his gloves each time he finished touching the meat. Grabbing condiment bottles and especially the toast points was serious cross contamination. He probably doesn't even disinfect the chopping board after each use. Pretty risky dining.
