    That's a good example of too finely chopped. The beef has been reduced to mush. Steak Tartare should have some texture to it, not this.

    What did you make there, garzon? I think you made mashed potato here. And for how many people? I understand steak tartare is served as an appetizer. It has to be done in the kitchen by the prep people. You made a lot of noise preparing it. You even scoot your nose with your gloves. Where is the elegant move. When you tossed the beef it should be gently not to bruise the texture of the meat. As if you are making a dough for the pizza. Come on. Old school professionals are watching you. You must be demoted to dishwasher.

    First Which is a Big No : is too many people speaking above the meat, it s raw meat and spitting isn t acceptable… Secondly the handling process show of cutting is unnecessary especially the throwing…. Health and safety inspection please 🛎️🛎️🛎️

    This clown just showboated for 11 mins making a Tartare???…that is inexcusable in a busy kitchen and it’s no wonder that his colleagues started coming up to him…this employee would be FIRED on the spot in most kitchens…this is an embarrassing level of haute culinary…dude chopped raw beef for 11 mins, I want that time back

    Took 40 min to mince the beef with a BUTCHER'S FAT TRIMMING KNIFE..... Boring AF......
