The original white enderman looks like a bug that can happen with texture packs where the game mistakenly ignores the alpha values on the enderman eye glow texture, causing the whole thing to glow white.

I did some research into this myself. The white Enderman is a texture bug and can be replicated by using an invalid texture pack. This actually also happens with white spiders, so researching "Minecraft white spiders" will give you a lot more results into this (most of what you get with the Enderman is creepypasta).
If you look at bug reports in forums that provide screenshots, the bugged Enderman directly resembles the one in the video with the server with the greyish white and purple eyes. The reason I saw given and what sounds the most likely is it happens with those two mobs specifically because of the eye glow effect using a different texture file. Both of those mobs are also affected by the glitch of appearing all white in fog.
It might be a bit anti-climactic too, but the white Enderman is technically real and unintentional, it just involves a texture pack not working. Though I think the white spider that results from this glitch is very cool.
..Unfortunately we get a good look at the Enderman in one of the screenshots and the eyes are green, there's no feasible way the eyes would be green if it was that glitch, so the vid is baloney.

There is the fact that enderman was actually a long black skinny zombie back in the older versions which explains it burning in the video and in early stages of development, it had green eyes rather than those purples

The white enderman was actually quite common when using custom texture packs in beta 1.8, same glitch could happen with spiders as well, as they both have an alpha on top of their normal texture for the glowing eyes effect. I'm not sure if it wasn't an McPatcher issue, I remember trying to play with the Faithful 32x32 texture pack (which I couldn't live without at the time), but I kept running into white spiders and endermen, it was driving me nuts.
Funny seeing a simple bug turn into an urban legend some 13 years later.

honestly next to the white enderman discovery the coolest thing about this is that playing on such an old version really made me feel like I used to first playing all those years ago, and that everyone on the server truly lived up to the nostalgia; the Herobrine summoning statue, the disorganised massive builds, the cobblestone home interior, the crappy camera quality and the fact that it was all done to hunt down an old rumour was the cherry on top.

Correction: the white enderman was not specifically supposed to be the farlander. The end dimension was first called the farlands and the enderman was supposed to be the farlander because they inhabitated the end

Eye color changed, the texture was transparent in the mouth
That was no white enderman, that was a directly modified game file
The original encounter had what your "white enderman" lacked, which were those two distinct details (The reason why the eyes don't change colors is because both Spiders and Enderman have "Layered textures" for eyes, which attributes to their slight glow)
What I think happens is that the bottom layer of the enderman's texture glitches out or is unreadable in some way (Attributing to the Opaque mouth texture and the purple eyes being untouched in the original encounter)
Or, perhaps, the most notable explanation: The original encounter was someone deciding to troll the internet :>

since he anyway used the newer version and then downgrade, he could've just teleport on a new version. And I also remember there was a trick in some versions where you cold easily get to farlands using enderpearl and nether portal. So pig launcher uses glitches, I assume, so why wouldn't just use much simplier glitch with pearl and portal.

There are so many problems with this video
1. The “evidence” is conflicting (especially eye color).
2. There was no point in using the "Pig cannon". You could simply teleport near Farland, not in it itself.
And the most important thing
3. Off all people, YOU didn’t see the white enderman, which is a key point in the investigation.
+ As one commenter pointed out, to be true you need to have a white and black enderman together. In one frame.
I apologize for the criticism, but in such an investigation you need to be critical, otherwise it will be no more reliable than the rumors themselves.

-You can use an NBT Editor to change your coordinates
-Minecraft don't allow you to tp further than the world border so just tp to a location close to it
-Your nether portal coords are around -4,259,066, so when multiplying by 8 you get your overworld coordinates to be around -34,072,528, but when downgrading, you landed near the farland's starting point around -12,550,825 ???

i've already seen the white enderman and the steps are simple:
1. spawn in 2 enderman
2. go into spectator mode
3. spectate through one of the enderman's eyes
4. the inverted colours will make the black enderman appear white

16:40 look at the left side, the dead enderman, you can see even though it’s red, it’s not as dark as it should be if it was black, it is white. They never show us the footage right before this. So either they are using a texture pack, or they found 2 at the same time.
Maybe the white enderman were the Friends we made along the way.
I’m convinced the final footage Blip got was using a recourse pack, or a modified version of the game that swapped the textures. Endermen with green eyes and black particles were in the game at one point, but only in beta 1.8 pre release 1, you guys were playing in beta 1.8. Also the ore release version of the enderman had very light green eyes, closer to white or neon yellow. There are no enderman particles in Blips footage either, which is peculiar. I do think white endermen with purples eyes are achievable, but with green eyes it makes no sense without an explanation. I hate to say it man but I think you were duped by Blip.

I kind of wish Mojang would add random alternate colored mobs into the game but make them extremely rare (like shiny Pokemon) so most people wouldn't even see them in the average playthrough but there is still a small enough chance. Even if it was something simple like just changing Enderman eye colors or making them white it'd make for cool encounters plus they could tie them to achievements.
Technically one thing like that is already in the game, the naturally spawning pink sheep. Considering it can be replicated with one live if dye it doesn't feel as cool

I did also reply to someone else with this message, saying that I personally don't care if it's real or not, but I think there's a certain joy in the unexplainable or the mysterious. People want to believe in this stuff, regardless if it is or not. It's fun to search and try to prove something is real to everyone because of the adventure it brings. It's sort of why people like the sasquatch (Something while I don't believe exists would be interested to see and thus don't shut people down for it) talk about it so much. Maybe more relevant, Herobrine. Here’s some more evidence: 16:40 look at the left side, the dead enderman, you can see even though it’s red, it’s not as dark as it should be if it was black, it is white. They never show us the footage right before this. So either they are using a texture pack, or they found 2 at the same time.
19:29 here you can also see “TheBlip” said that they tested and white endermen are client sided, meaning it is probably something to do with visuals, like a texture pack or very weird glitch

The cool part is that the white enderman actually makes a lot of sense as it is made up of the inverted colors of the enderman. i would guess that the stress on the server causes a minecraft visual error having inverted the colors. Just my guess tho

They'd have to show a regular black endermen and open up the texture files themself to prove they hadn't edited the endermans files directly instead of using a texture pack..
