      you know how cotton candy dissolves on wet fingers or in your mouth or when its humid, if you maybe could dip it something that isn't wet that won't dissolve it; that isn't hydroscopic, which there aren't a lot of.

    1000g Sugar
    100g Corn syrup
    2 cups (475 ml) water
    1 teaspoon vinegar
    Target temperature: 271°F (133°C)

      Let it cool for 10 minutes than poor it into containers unless you have good high heat containers. This also works if you cut it in half

      It's not, though. Well, authentically, it's made out of hard honey. And even if it was sugar, wouldn't be the same since cotton candy is made out of heating the sugar and spinning it while this is more of just pulling it a lot. It doesn't taste like cotton candy at all.

      Tens of thousands of scientists, mathematicians, craftsmen, cooks and even at least one senator have wished for the same. He didn't call it an ancient Chinese recipe, because it isn't one, he called it a technique that can also be used on sugar, and you can utilize a microwave.     I am from Hong Kong. Dragon's Beard is still found here. It is eaten with chopped peanuts wrapped inside. A box of 6 little pieces is about 1.5 USD, sold mostly at street stalls. I used to love eating them because of the cuteness, sweetness and funny texture. But now I find them a bit too sweet for my taste, and can eat up to maybe 2 or 3 pieces per day. I still buy them from time to time though just to remind myself of the look and feel of such classic candy, which is getting rarer these days. Thanks for making a video about Dragon Beard, and introducing one of my (and many more Hong Kongers') favorite food growing up to the world. I actually have never thought about how the silly strings are made, and now I learned.

    helpful hint: if the sugar strands start to get too stiff, heat up your flour a little bit in the oven, it'll help keep the strands pliable

      Max Arakelian powdered sugar will melt more easily in your hands and mix with the candy floss creating a sticky mess... cornstarch dries out your hands and doesn't absorb the oils from them as easily therefore keeping the sugar dry

      Don't even need the corn syrup. What you're looking for is a mixture of glucose and fructose. Table sugar is sucrose, which is glucose and fructose bound as a single molecule. Adding an acid (the vinegar) breaks the link in sucrose and creates inverted sugar, aka a mixture of glucose and fructose, aka corn syrup. So basically, you could do this recipe using corn syrup alone, or you could use only table sugar (sucrose), and convert it to glucose+fructose using an acid. Vinegar is used as the acid, but you could also use lemon juice, citric acid or cream of tartar.

      Water only goes to 212 Fahrenheit. Water is used so the sugar doesn't scorch in the pan, once the water boils off the leftover sugar is melted and can go to higher temps.

    it would probably be easier to just build a cotton candy machine, you only need to make a spinning canister with mesh sides oh and like a bucket so you don't spray hot sugar everywhere

      Diethyl or just cut the top of a whisk off and dip the spokes into the hot sugar then wave it back and forth over a nonstick mat, or even into the corn starch. I saw Martha Stewart do it and it worked surprisingly well. It actually looked like cotton candy when you get the technique right.

      whatever i guess and Eater channel, maybe I'm wrong here but I'm pretty sure that Richard was wondering why Eater labeled the video "cotton candy" which is pretty misleading, since this would neither taste like cotton candy, or be made like it, you both seem happy that someone understands, but I'm pretty sure that's not the right reaction.     I’ve been trying to make this for the past 2 weeks and every time I try it either breaks while pulling and falls apart, I burn myself while trying to make it or a piece would break off and cut me….       The ancient chinese part is the pulling and twisting technique, not the actual sugar. The technique was used to make the long, thin noodles popular in china

      I'm wondering if your cotton candy on a stick is that flowey and smooth?
      Anyway it doesn't really taste like cotton candy with the starch and the fact there no flavoring as there is almost always flavor in cotyon candy

    I used a deep fry thermometer and followed the recipe right exactly to a T, I didn’t stir it and I was waiting for my thermometer to go to 260F (as per the recipe says) and it was burnt I made sure it wasn’t touching the bottom of the pot, so I tried again being very careful and conscious, it was still burnt but not as much as the other one. Both batches hardened immediately? Can you help me please??

      LustyBear maybe you can use gloves if you want to use confectionar's sugar, that way there won't be moisture from your skin to dissolve the sugar into a gooey mess, but I'm honestly not sure how much of an impact that makes. Cornstarch can absorb moisture to prevent clumping and is often added to powdered sugar for that reason :/ if you do succeed with powdered suger I'd be interested in that! :D

      Confectioner sugar aka icing sugar is literally really fine sugar mixed with cornstarch anyway. Give the strands a good shake and it'll taste fine, well done dragon's beard definitely tastes a lot less starchy than icing sugar.
