Filipino Recipe: Lola's Ube Halaya or Ube Jam

  • Ube Halaya or Ube Jam is a Filipino favorite dessert
    Package frozen grated purple yam
    or boil about 2-3 cups of purple yams, peeled and grated
    1 can condense milk
    1 can evaporated milk
    1/2 can of coconut milk
    1 stick butter Leave some to butter the serving dish)
    1/2 cup white sugar
    1-2 drops of purple food color
    Optional: add ube flavoring if it is available in your area
    In a nonstick deep pan, place the ingredients together.
    Cook for about an hour stirring constantly to prevent from sticking to pan
    After an hour you can see the consistency has thicken - add the food color (and flavoring if you wish to add as extra flavoring)
    Cook for an additional 45 minutes or so until it has become very thick.
    Serve in your buttered dish
    Eat as a dessert as is or enjoy it as an added flavoring to other filipino dessert such as: bread, ensymadas, ice-cream, ube maja blanca .....

    Thank you you and your lola so much for this recipe! I made it for the first time and I couldn’t stop eating it straight from the pot! I did use a blender towards the end because I wanted all the yam chunks to smooth out and it was the perfect consistency! Great addition for fillings for pandesals! Thanks again!

    Thank you for your video! I was wanting to make ube cupcakes with coconut frosting and it called for ube halaya so I figured it’s time to learn 😅 I’m not Filipino but my boyfriend is and thanks to this video I’m planning to make some cupcakes for our nanay and neighbors😊

    thank you so much for this recipe. it was delicious. As good as my fave ube halaya that my aunt makes when I was still in the philippines. it was so worth the 1 hr and 15 mins nonstop stirring. LOL

    Yum! I bought some frozen Ube similar to what you showed here. I was pleasantly surprised to find the frozen Ube so I bought it without knowing what I was going to make with it. This looks amazing and delicious, so you know it just HAS to be my first dish I make. Thank you for the demo. 😁👍

    Thank you for sharing your Lola's recipe. My Mom and I cooked it and it was a success. We didn't put the coconut milk on and we used 1/4 cup of sugar and still tasted great. Again, many thanks!

    Thanks for this recipe! I just made my first ube jalaya and it turned out great! Although I used regular milk instead of evaporated milk. I just found out the evap milk was expired when I was about to open the can lol

      My first ever attempt with ube halaya, I used expired evap. It was savory and good. I did it again, and it didn't taste the same. 😃 My first attempt was better.

      UBE Everything!!!!!! LoL ---- :) use jam in the jar I have never tried but making your own is so easy and you can freeze it for use ice cream flavor ... I made use cheese pandesal but the quality of the lighting wasn't great -- I'm still debating if I should edit it. use cookie I have tried as well and its so yummy :-) use cheesecake is one of hubby's fave and my kids love my use macarons :-) oh my gosh .... I want to bake use something now :-) LoL ...Mahalo for stopping by ***hugs ...d

    What I make this I use heavy buttercream condensed milk I use a pressure cooker to steam the yams to make them softer

      Her recipe calls for 2-3 cups of regular ube, so that's 16-24 oz (450-680 grams)

      Hi Diana :) Yes the coconut milk makes it more creamy and it freezes well. I freeze mine in small batches so I can add it to my macarons and other toppings for my desserts or add-ons :) This will be perfect for cake fillings as well or to add ube flavor to it :)

    OMG I love the blooper at the end...I love Danika she is so sweet. I had to laugh when you call the cooked Ube a big blob, sounds like how i would describe things in my videos..LOL How do you describe the ube, is it like a custard or pudding like or a filling, do you eat it by itself?

      Aloha Debbie :) Yes I had to add that blooper in there! she was like ....SSsshhh! Let's continue like nothing happened! ...:-) This ube is like a jam. You can eat it as is once you cook it this way. or it is used for flavoring into cakes and other pastries and as filling :) The flavor is like the Taro Boba tea ...

      you can add less sugar if you prefer. It's sweet because it can be added to ice creams, fillings, breads and so much more ... but if you eat it by itself then i suggest less sugar :-) I hope that helps

    My didn't get the purple violet colour . Stayed light purplish.
    I only forgot the coco's milk. Is that why it didnt got violet?

      some frozen use is more darker than others and I also put a purple gel color to get the deep purple sometimes when it isn't a deep color. But you would need the coconut milk to have that authentic taste of ube :) Hope this helps.

      Aloha :-) unfortunately i don't think so -- stirring presents it from sticking and clumping. I am not sure how it will turn out in a slower cooker.

      No I'm sorry but it will not taste the same ----- this is available in frozen section of asian markets as well :)

    Be organic, no additional food colour...its more yummy...food colour enhances the colour, not the texture...
