The cheese doesn't really make the ube salty for my taste but if you prefer it not to have that cheesy taste, you can definitely skip or lessen the amount of cheese. 😊

When buying Frozen Ube, the best brand so far I have used is TROPICS brand. NEVER buy a knockoff from a Vietnamese brand. It is not the same as the Filipino grated Ube root crop. Also, to bring more purple color to your Ube halaya, use the "Sweet Cow" brand Ube condensed milk. It is really dark purple. LOL!! Your ube will look so good you need that food coloring. And last but not least cook it a non-steak skillet. It will evaporate the liquidity in your ube. You did not reach the consistency yet. You should be able to see like a volcano lava when it's cooking from your pan.

I've never tried to keep it na hindi nakaref. I would recommend keeping it in fridge kasi it has milk.
Maybe calibrate instead of full cans of evap and coconut milk, i wonder if its shld just be half half. Its too runny.
