    I LOVE all your recipes! I've been a cooking show adict since like 13 and always interested in learning better ways to make good food. You never overcomplicate your dishes and you always give measurements in grams and cups. I love love love it. Every single recipe you post is awesome! You're my go-to lady:)

    Totally agree with your philosophy of salt. It just pops the flavor. I cannot tell you how GOOD this dish looks. On the menu for next week! I love using store bought rotisserie chicken! I use it to make my homemade chicken salad ;)

    I feel like I'm in your fab kitchen....you're amazing. I make these for my Mother. I've done this one but I have another dryer type of pie that reminds me of the Cornish pasty from England...I make a dryer sauce/roux and use turnips and or potatoes chopped, herbs, salt, pepper make- put in foil muffin tins(with bottom crusts too) or the pie dishes you showed bake and freeze for later. Then I can serve with side dishes when I reheat them. I have even served with my homemade curry sauce on the side YUMMY. xoxo

    You are my go to guru for baking!!! This recipe was fantastic! I agree, tarragon and chicken are the best pairing. Whenever I make chicken tarragon is there. Following your meat pie recipe, I made a bottom crust. I didn't blind bake it -- both top and bottom cooked evenly.

    Dear Stephanie…thank you for such a delightful recipe! I am an ardent fan of your pound cake recipe…but I ventured into a main dish today as opposed to a dessert…and boy, was I glad that I did…!!!! The chicken pot pie is ABSOLUTELY FANTASTIC…I followed the recipe to the letter and it was all gone in hours! I’m literally already putting together the ingredients for a repeat performance!!!!     Hi Stephanie, I made this last night for dinner for my husband and I. It was so delicious!!! The pastry crust was so flaky and good and the filling, creamy and flavorful.     I got an Instant Pot electric pressure cooker, so now I can make whole chickens myself instead of buying rotisserie chicken. Some have been too salty for me.
    I also pressure cooked potatoes and a bunch of carrots, so I could use them for this recipe and another. I did the saute in my 12" Lodge cast iron skillet, and instead of making smaller pot pies, I used all the dough to make the crust for the 12" skillet. So the crust went on top of the same skillet I cooked all the veggies and got the gravy nice and thick in. I also added cheese for the last 10 minutes so it wouldn't burn.
    It takes about 10 minutes longer to cook in the larger skillet. The crust is definitely my favorite part, and next time I want to try doubling the dough to make a bottom crust. Cast iron is exceptional for savory pies, I think. The buttery flavor of this crust was perfect. This was the first time I've ever made a chicken pot pie but it definitely will not be the last time. It was so delicious and it has been cold here for several days so this meal warmed me from the inside. It's great that I don't have to adjust the recipe for guests since there was ample dough.
    Dessert is Stephanie's cocoa brownies with homemade peppermint ice cream.

    Going to make these tomorrow-thanks for using the thyme and tarragon-that was what I was going to do instead of just poultry seasoning. I think those two herbs with the vegetables and the onions will produce an excellent gravy for the chicken. As always good vid with helpful ideas

    Thank you for sharing your techniques. These pot pies look amazing. Love the fact that you added parmesan cheese on the pastry. Stephanie, I would even add maybe pearled onions, green onions, and definitely a little bit of garlic too.

    You made my life so much easier with the aluminium foil containers .. its so much cheaper ( especially when you're makin it for the first time.. ), awesome recipe, its chicken pot pie with soul an I really enjoyed watching you make it ..I may just use corns though lol,Thank you and Godbless you :)

    yum, stephanie!
    one thing i always do when i add dried spices, is to rub them between my fingers as i add them to my dish. dried spices can tend to loose their flavor very quickly, and especially over time, but crushing them between your fingers brings back all the rich flavor that you want.
    something else i often substitute for the tarragon is marjoram - it pairs well with chicken.
    i also like a double-crust pot pie, a la the old fashioned swanson's pot pies, but that's personal preference, and i'm sure that this crust recipe can be stretched enough do that.
    (and i see that baxter is looking for his plate to lick after you and rick are done! lol! hope he did get a treat!)

    P.s. I love sage, and perhaps rosemary with my chicken. So it's likely I'd leave out tarragon. All of the rest sounds delicious! And so simple. I really hope my crust comes out well. (I do love a flaky, buttery pie crust) Thanks again. I enjoy your videos very much

    Loved ur recipe of pot pie mam. When the broth was boiling, it was looking so tempting enough to eat. I learned a new lesson today from ur channel, that people who don't drink shouldn't add alcohol to thier dishes. I was unaware of that & was intending to try fish made in wine.

    Greetings from Santiago de Chile! Thank you very much for this recipe. I just tried it for Easter. It was fantastic! I had to do some small changes to the crust in order to make it more diabetic-friendly - I used whole grain spelt flour instead of all purpose, baking sweetener instead of sugar and 3 Tbsp of ice-water was enough. I did the filling just as you suggest, however using low-fat cream and the same spelt flour for the coating. Big fan of your videos here and again, thank you.

    Can you line the dish with pastry then put filling in and then cover with more pastry? Would I need to cook pastry in dish first?

    made these last nite and put in fridge till today for lunch, I tried a little variation and used only chopped potato asparagus and onion. (I love asparagus) they were the best pot pies ive ever eaten. thank you for sharing and ps I love your dog, he (or she) is adorable
