Better not use Garam Masala. It will make your dish dark. If you want to Garam masala, just sprinkle after the dish is cooked. I am novice but ask Mr. sokhi for his comments

Sir mera ek sawal hai. Chicken curry banate samay Chicken pieces kitna time tak pakana chahiye ta ki soft rahe, kaisi aanch rehni chahiye? Ghar mai chicken resturant jaisa nehi banta. Hard ho jata hai.
You may be able to buy UHT Pure cream, or you could use plain or Greek yoghurt or Coconut cream but whipping cream generally contains gelatine and isn't good for cooking, any fresh cream will work such as sometimes named cooking cream, as long as it has no additives in such as gelatine. I am surprised you can't get pure cream in the US, we are so lucky here in Australia, we have such variety of foods from all around the world due to our massively multicultural society.

For best results use boneliness, skinless chicken thigh. They come out more juicy than breast.

Do not add cream and put in the freezer when you reheat at that point of time you can add cream..

The only thing that i can think is the quality of tomatoes, there is no other ingredient that brings the tartness in it..
