    I have tried this recipe and my gosh!! The best looking cupcakes I’ve ever baked and it was moist, sweet but not too rich, the top of the cupcakes were flat and perfectly smooth. I suck at baking😅 and I love watching your videos, you explain things very clearly and you break it down to simple steps so that it doesn’t seem to overwhelming. Thank you so much for your videos and sharing your knowledge with us.

    Hi Nick, do you use buttercream in Australian winter? I noticed my buttercream tastes creamy in summer but tastes like solid butter in winter even though stored outside!! I realised its because its too cold.

    I have a little issue, so i live on an island near the tropics so.. its always quite warm here, i never an able to make a pipe-able buttercream since it always get too loose. Is there any solution for that?

      Try Swiss Meringue Buttercream!

      pop it in the fridge before an after each time you use it so it doesn’t melt and add more powdered sugar if you’re making an american buttercream

      Bigger Bolder Baking has a great egg substitute chart so you can use Nick's recipe and swap the eggs with something appropriate

    Not sure why but when I make your chocolate recipe, it tends to really... Explode in the tins. Like, they just puff up so much! Very weird cause I love your vanilla recipe
