how are the sides of your cupcakes so clean after baking? my cupcakes from the side (liners) tend to look greasy/oily. the cupcake itself is never too oily but from the sides the liner completely loses its vibrant colour/pattern.
Loving , all the Basic Baking!!Baking time for MINI CUPCAKES PLEASE at 140 degrees. I don't trust my ability to check "doneness". I heard a skewer inserted should come out 'just' clean, coz they keep baking when you take them out of the oven. If you wait til 'clean' they are overbaked?

I don't do this and my cupcakes never dome. What I do is reduce the heat by 25 degrees and let it slow cook.
