    My Top Tips for making amazing cupcakes!
    1. Don’t over-fill your liners - how to fill them correctly, test batch
    2. Always bake at the right temperature
    3. Always use good quality ingredients at room temp
    4. Don’t over-bake - how to check cupcakes are baked
    5. Always bake one tray at a time and always bake in the centre of the oven
    6. When you’re coring your cupcakes to fill them, don’t core all the way to the bottom otherwise you risk the cupcakes becoming soggy at the bottom
    7. When adding fruits and berries into your cupcakes, always bake an extra 10 minutes because of the added moisture
    8. Always bake cupcakes as soon as the batter is done. Don’t delay the baking process otherwise the raising agents may not work properly when baking.
    9. Always cool your cupcakes before frosting them. Best to let them cool on a cooling rack at room temperature. Chilling them in the fridge may cause them to shrink, sweat and cause the paper to come away
    10. Store your cupcakes in an airtight container for up to three days for best results.

    That was amazing Nick! I have a ton of questions about my nemasis.....Fondant 😤😤😤😤. I of course have followed ur directions for ur cakes ie: cooking, cooling, wrapping, placing in the fridge and decorating when chilled. Then the horrible daunting task of covering with fondant comes. As you know, here in Ga, its pretty humid. The "Sweating"...😣😣😣😣😣, I cant seem to get away from it! Please help! Xoxoxo

    I use McCormick Vanilla Extract. Would you reccomend that as well??? I will definately try Queen.

    The amount of frosting he puts on his cupcakes is insane🤣🤣 Most people don't understand frosting is there for aesthetics as well as to keep the cupcakes moist. What's a cupcake with a miserable little swirl after all? I always tell people,namely my mum who always complains there's too much frosting to just scoop off what she doesn't want. She never gets it.

    Could you, or someone who knows, tell me what liners to purchase? All of my liners have always been the same size as the cupcake pans. I want them like the ones you use. They are taller than the hole they are in. Thank you!

    Can I make cream cheese frosting the night before and put it in the fridge and pipe it the next day? Do I need to let the frosting come to room temperatue before piping or is it better to pipe with chilled frosting? Does storing your frosted cupcake in the fridge overnight and thawing them before serving change the taste of the cupcake? I'm thrying to figure out if I should pipe the frosting ahead of time and store the whole cupcake in the fridge or pipe the day of for an event? Thank you!

      1)I would normally make ganache frosting the night before so I don't see why not.
      2) I prefer chilled icing
      3) You can put piped cupcakes in the fridge so no need to pipe on the day. It should change the taste but may change the texture (might become a slight bit soggier)

    i always tend to overfill my cupcake liners and the cupcakes batter bakes over the cupcake liners. then i have weird cupcakes with a shaved edge bc i normally trim it. I’m definitely going to try your methods soon! but i don’t have acces to a scale rn and i’m trying to buy one.

    I have to disagree about domed cupcakes. I prefer my cupcakes to have domes because you are getting a bit more cake and height that way when you put the frosting on. As far as them looking better flat? You are covering them with frosting anyway so who's going to see a dome on them? Cupcakes that are flat look sad to me.

      I find it easier to have them flat when decorating and adding things (such as doughnuts) as the hump gets in the way and stops them from sticking as well.
