Think of hemoglobin like an amazon truck that can only carry so much cargo. Oxygen and carbon monoxide are both cargo. The oxygen will stay at the warehouse and not be delivered if carbon monoxide is hogging the truck.

If the prosecution doesn't dispute it the defense definitely won't, the prosecution also dropped the ball by not asking the officers who testified how much their duty belt weighs.

No evidence was withheld, it was not known about until Dr Baker saw Dr Fowler testimony and looked in to it. It was all explained very clearly. Also no Mistrial because Dr Tobin was allowed to talk about the blood gas results already in evidence but not the new result of the CO levels that was just found.
