📝INGREDIENTS:
🔸 Onion 80 gr
🔸 Red pepper 100 gr
🔸 Tomato 100 gr
🔸 Garlic 30 gr
🔸 White fish 1 kg
🔸 Crayfish 4 units
🔸 Clams 12 units
🔸 Smoked fish 1 l
🔸 White wine 100 ml
🔸Fine corn flour 20 gr
🔸Paprika 10 gr
🔸Olive oil
🔸 Parsley
🔸Saffron
🔸Salt
🔥 PREPARATION:
▪️1. Sauté the garlic with the onion and pepper.
▪️2. Add the tomato and sauté covered with a little salt.
▪️3. Add the flour, paprika and saffron.
▪️4. Give a few turns and put the wine.
▪️5. Place the fish and shellfish.
▪️6. Cover with fish broth and cook for 8 minutes over low heat.
▪️7. Finish with some fresh parsley.
🔍 TIPS:
🔹 The best fish for this recipe is hake and monkfish.
🔹 You can turn the fish around halfway through cooking.
🔹If the sauce is too liquid, you can thicken it with a little fine cornmeal. (Dissolve in cold water and add to the stew minutes before turning off)
🔹 Fish cooking time may vary depending on thickness.
