I think that is a really good rule good rule to go buy "everything in equal proportion". Growing up in Miami I'm used to and more Cuban style which is similar to this but with some Olive oil boil and citrus like lime or bitter Orange. I'm definitely gonna try this recipe though though because it seems very balanced and a bit more versatile.🙏✌

i like how you said "to chop something so small, and then fry it" for a base and for flavor. I think the Vietnamese version of "sofrito" consists of garlic, shallot, chili peppers, and lemongrass. We typically chop them up very small and fry it before cooking many different dishes. LOL

YESSS!! I like to make curries a lot with (more Singapore and Indian ones) and sofrito reminds me of their curry pastes!!! Different pastes are fried first for aromatics and flavor and then usually add and fry the protein, coconut milk, and veggies. The differences are spices used and sofrito has texture while curry paste is smooth. 😻 Very cool!

We make sofrito in Mexico too and we add it to absolutely every dish with the exception that for certain dishes we will remove one or more ingredients but all include garlic and onion and cilantro either fresh or seeds
@@lizj6314 yes, this is probably enough for two dishes 5-6 garlic cloves, table spoon of cumin, tea spoon of clove, tea spoon of black pepper seeds, tea spoon of cilantro seeds, make a paste with those ingredients the it can be added to chicken soups / chicken dishes or beef soup and beef dishes, we also fry that paste mixed with another paste of tomato/ bell pepper/ onion and that’s what we call sofrito, Add salt to your taste , for fish dishes we use the same base paste of dried seeds plus dry oregano.
Culantro is the wide leaf variety and the aroma is stronger. Cilantro (Coriander) is the variety that looks like Italian Parsley, except the it has a sweet aroma when cut or eaten. You are welcome! 🥰

@@ohger1 Since childhood I always watched my relatives make sofrito with only Cilantro, but you can use both Cilantro and Culantro or just Culantro. It all depends on taste preference. Cilantro is milder whereas Culantro has a stronger taste, not to mention smell. I also like using Cubanelle peppers. You are welcome!

That is "recao" in English is call spiny cilantro or broadleaf cilantro it is in my opinion one of the most important ingredient when making sofrito. It's not readily available but most oriental market carry it as "Ngo-Gai" I hope this helps, thank you for watching.

If you can’t find recao substitute and use a second bunch of cilantro. You may be able to find it as ngo gai in an asian grocery store.
