I'm a new comer to puerto Rican foods. I'm afican-american and my other half is puerto Rican. I'm glad to see and hear about the different types of foods of your culture. thank you for your hospitality.
Waterboarded wait! Your seeds were passed down through generations? Are you real? Why? 😳 What makes them different? I am asking because I’ve noticed that cilantro and recaito leaves don’t smell or taste like they used to several years ago. They don’t have the same aroma or flavor and you have to use more sofrito when cooking with it because the flavor is weak.
didn't know what sofrito was or it even existed until I met my wife, who's Puerto Rican (I'm Mexican). I made your sofrito and she loves it; she said it's better than her mother's :-) I split my batch into two, I add a couple of jalapeño peppers for my batch, since I like heat, my wife does not.
+adam thompson ….Hello, the recipe, as she makes it, makes 12 cups (3 quarts) of sofrito. That's how much I got when I made it. I have a vacuum sealer (Foodsaver) which I use to freeze most of it. I leave a jar of sofrito in the frig (also in a vacuum sealed jar) for ready use. You can freeze without the Foodsaver, using plastic jars as my wife does.
Ingredient Amount I used: Cilantro - 3 bunches or 12 oz Culantro* - 3 bunches or 7 oz Aji Dulce (sweet pepper) 15-20 peppers or 8 oz Garlic (skinned) 2 cups or 12 1/2 oz White Onion (skinned) 3-4 Large onions or 2 1/2 Ibs Cubanelle peppers (stemmed and seeded) AKA Italian frying peppers (or Bell peppers)4-5 peppers or 1 1/2 Ibs Makes 6 pounds 4.25 oz or 12 cups or 3 qts I used a food scale. For one quart use 1/3 of the ingredients.

This is a great video, I call my mother every couple of months for her recipe, and she constantly gets annoyed with me because I do not memorize the recipe. Now I think she will get annoyed with me because I am NOT using her recipe :)
I love the taste of cilantro cause I grew up tasting it in almost EVERYTHING. My grandma never skipped out on the cilantro and when I found out that most people don't like it I was so shocked lol.
J A Y S I C K A Correct, but we seem to prefer using parsley over cilantro & young onions- scallion/green onion instead of the big onion. I'm not to picky, I use whatever I have, I've even made it with leeks & shallots! 😂 My mom is so old school, she makes hers fresh everytime she cooks!😍 And hers is simple - scallions, whole black pepper, cloves, Maggie, scotch bonnet/habanero & garlic - all mashed in her pilon. So good! How do you make yours?
My husband is Haitien. When I cook for him I use less sofrito because he finds the flavor too strong. That’s because he is not used to the cilantro. My mother in-law didn’t know how to use the cilantro and didn’t like it. But I told her to use less and now she uses it in her food because of the health properties it has. Cilantro is good to clean your kidneys.
What a inspiration! My mom in law taught me how to make this but because of her lack of the correct word to use for the Cubanelle and culantro we left them out. Of course it did not taste like her's from NYC she would bring. But now with the actual names I got on line and ordered the plants to add to my garden. Both have arrived and I am sooooo excited that I can now make the traditional recipe. Now to learn about their seeds so I can grow my own plants next year.

Until now I never used cilantro in my cooking and my family was always asking me to make Spanish rice but every time I tried or they never liked my rice and I didn't know why. I love Spanish/Puerto Rican cuisine and watching your videos has helped me give my food that authentic flavor. You should definitely think about branding and do a cookbook.
I tried your Sofrito for the first time on yesterday. I marinated some chicken breasts in it for several hours and then put the chicken on the grill. Wow! It was a huge hit with my family and friends. Absolutely delicious. I had some chicken left over for lunch today and my son just took him a couple of pieces to work with him for his dinner later this evening. Again, absolutely delicious!!
Gracias mija por compartir tus recetas tradicionales de Puerto Rico. De mi parte mi madre nunca quiso enseñarme a cocinar, no le gustaba tener a nadie en la cocina. Thank you so much for this video I love Puerto Rican rice dishes. One of my good friends is Puerto Rican but she doesn't make her own sofrito she gets it from a relative so this video was very helpful in teaching me how to make my own. I've been trying to make my own Arroz con gandules but It doesn't come out right because I didn't have the right pot. She told me that I needed a "caldero" So I recently ordered one Amazon. I looked high and low in stores for one but they are so hard to find in my area. So now I'm anxiously awaiting for it to arrive so I can try to make the rice again...
Thank you so much for your recipe. I have been begging my Latina friends to show me how to make this and the rice and pigeon peas and they never had time. So, my family is very grateful for these tutorials. I have made this so many times, even bought a food processor so i would do it correctly. ♥️♥️♥️♥️♥️
Thank you so much for this recipe and for explaining the kinds of peppers you use! This is the best recipe for sofrito on RUclips, period! You deserve more recognition than you get, that’s for sure!
Absolutely the best recipe for sofrito. My family has never used bell peppers so as soon as I see a bell pepper sofrito recipe i scroll past it. I don’t like the harsh taste of bell peppers. This recipe is perfect. It’s authentic and doesn’t have weird added ingredients that aren’t Puerto Rican. this is the best Ida! All these years later and it’s the best
Im from Panama , and love to cook . I just subscribed to you channel , because i love to learn new dishes. And while i was looking for a recipe for pernil i got here... Thank you
You express yourself so clearly. Thank you so much for the specifics. Many blessings. I've added these ingredients to my grocery shopping list. I've been making beans from scratch lately and they've come out great, but looking for variety. This one is closest to home, to my family tradition.
Hey Chica... I was looking at your sofrito & after 21 years of making it with a blender. I'm going to use my food processor I just bought for my pasteles. P.S. the ice cube tray is a wonderful idea. Amazing that even when you know how to cook you learn & get ideas from other cooks ❤💋thanks
Hi Ida - this is my first time watching your videos and I am hooked!!! I used to be terrified of attempting Spanish cooking even though I am Latina! I just never learned!!!! I am so excited to try your recipes!!! I don't know where to start lol...tostones, sofrito and the ensalada de coditos is where I may begin ...if all goes well then maybe, just maybe I will be brave enough to try the arroz con gandules :) Thank you so much for posting these videos -not everyone grew up learning this. I am so excited, its terrible being Latina and not knowing how to cook the classic Latin meals! Wish me luck -I am off to the kitchen :)
Hello! When we have a "bajón" of puertorican food, my husband comes to your channel and makes your recipes all the time! We would love to see a recipe of asopao. Thanks for sharing your talent and knowledge!
Awesome video. For thoses that cant find certain ingredients at their local supermarket check your local Spanish bodegas if they don't have them visit your local Asian markets. They usually have all the ingredients as they use them as well in their recipes.
This only the second really good sofrito video (using a food processor) I have seen, I love it, keep the tradition going on. Thank you. I am looking forward to seeing more of your videos.
Aida, woman, you had me at the Alcapurias, the Pasteles, the Arroz con Gandules, and you have me at this tres leches cake!!! I am so excited to surprise mi familia with sheer Puerto Rican magic!!! I will honestly be a busy "JewBaRican " getting ready for a Great Shabbat Estilo PuertoRiquen`o BOOM! XOXO
I'm making your sofrito recipe tomorrow so it can be ready to use for your habichuelas guisada from scratch recipe that I will be making on Saturday 😉... Thanks so much for sharing your videos!..
Ida.....wow!!!! I came across one of your video's yesterday in search of a recipe.....and I haven't stopped watching you yet....and today......is tomorrow, hahahaha (another day, lol) So, I just wanted to tell you that I think you're amazing. You are very detailed and that's so important for the ones that have never prepared the foods we prepare!! Great job..to be able to actually see it being done, instead of just reading it, is the best way to learn....please continue to add more video's, I think that you're doing an awesome job!!! Thank you.
Not sick of you at all.....and I'm sure I wont be....right now, I'm on your site and on the phone with a friend as we share your recipe's together........lol
I like your way of doing sorfrito, I made it but I put it into snack zip lock bags, then I put all the bags into one big. and then I put it into the freezer, when I need it I pull out a bag. thanks ,love ya!
I love the way you do sofrito, my mom does this when she cooks, and she doesnt freeze her cuz she just makes enough for that day, but my sister freezes her's, and your ingredients are the true way of making sofrito, it should be chunky not soupy, and i love the ice cube tray idea, i think thats an awesome way to package them up
I made it tonight and it came out beautiful in my food processor, and luckily I was able to find all the needed ingredients at the Asian store near me. Ur da bom Ida! Thank you. My childhood friend from Connecticut, moved back to PR about 5 years ago.. I miss her a lot..she also lives in or near Poncena, just her and her elderly mom and all her dogs and cats..she's very sweet like you, LOL, I seriously should hook you two up since your so near one another, she loves to cook also. I bet she would just love to meet you.
you make it just like my mami yummy...she also puts them in ice trays so much easier to just use the cubes of sofritos...we dont live close i live in jersey and she lives in Delaware every time i go visit she has my bag ready with the cubes..i should try doing it myself now....lol
Thank you your instructions are great and real easy to follow looking forward to making pastels, monfongo and a lot of the other great recipes....thank you
You have like the best way of explaining things 🙏🏽 now I’m going to make a whole bunch for myself I like this because it does not have any salt or oil so you can definitely control what you’re eating . after watching this video I’m never going to buy Goya Sofrito ever again....
Ida. Thank you for the great food recipes. Your cooking reminds me of the great tastes my Puerto Rican grandmother use to serve us. It is wonderful to taste that great food once again. I have subscribed. Just have to watch my weight more closely now.
Great video! I make mines the same way but my abuela would do it in a pilon fresh everyday and used to say that fresh was the only way and that my way was the lazy way lol... God rest her soul
Hi Ida, I want to make your Red Beans and Rice dish (I'm glad I wrote it down) but I wanted to see it again but I cant find it anywhere. So glad I wrote it down. My family loves it so much.
Thumbs up! Unlike other utube video cooks, they don't explain want things really are or the true name, you did so kudos to you. (Culantro is also in the parsley family and just a more of a bitter taste than Cilantro. I totally agree with food processor. I also don't add salt but sometimes a drop of EVO just to start up the liquefying. And I DO add a small amount of fresh oregano, its not overpowering but gives a nice taste. Good going.!
Just how my grandma used to make it! I can't wait to make my own! I'm even going to try to grow my own ajis dulces and culantro. I'm in Florida so the climate is perfect. For those having a hard time finding the ajis dulces they are also called cachuchas, and the culantro is also called long coriander. From Wikipedia: Other common names include: cilantro coyote (Costa Rica), recao (Puerto Rico), cilantro ancho or sabanero (Dominican Republic), long coriander, wild or Mexican coriander, fitweed, spiritweed, stinkweed, duck-tongue herb, sawtooth or saw-leaf herb, and sawtooth coriander.
Hi.Going to make your pasteles I already have the meat cubed and seasoned overnight. I love your idea to use food processor for sofrito going to give it a try I like the texture of your sofrito ! To funny i use icecube trays too I thought I invented this idea😂 Making pasteles is mucho trabajo but so worth it ❤
Thats how my mother and grandmother. Made sofrito. I use big Spanish onion. . love stop giving out our secret recipes .. Chinese people dont give up. Stop thats worth mad money Adia .. 🗽love u ..
I cannot wait to try this! I have made Sofrito once, but it didn't have the culantro or sweet pepper. I wish I would have plastic wrapped it more than once because my fridge smelled like sofrito for days :) thanks for the video!
First time making this on my own. I love the ice cube method it saves time when cooking instead of scooping it out of a container. Taste good just like my 2nd mom's sofrito she would make so much give it to me never had to make my own til moved away from home and I hate the Pre Made Goya Jar one's at the store they lack flavor
Making your own sofrito is the best 👌 I learned about two years ago from my grandmother (we do it a little bit different)and i have not bought store made sofrito ever since its not the same Lol.
I enjoyed watching this a lot! I have watched other "HOW TO" videos on SOFRITO but this one is quite similar to the way my mother does it...and she is "PURA-CEPA":)...except she uses the a blender and adds salt as a preservative and cold pressed olive oil to help process it). VERY old school indeed! I guess I'm gonna bring her up to date and get her a food processor for Mother's Day! LOL!
wow, thanks Ida...you are a great teacher....I'm not Latina, but love the food and cook it often, but I use the jar sofrito. I've made sofrito a couple of times in the past, but I think I'll be using your recipe and make my own and freeze it. thanks again Ida...love your videos. By the way, do you have a video on making pernil?
sweetsandbeyond great...I love making pernil...it comes out really good, but always love to see other recipes. the one I use most is from LatinKitchen. can't wait to see your version.
@reharris904 There are some stores that carry sofrito in the frozen sections. There are also several brands that have jarred stuff. But it's not the same from what I make.

awesome. i would love to have a sofrito garden!

Garlic (skinned) 2 cups or 12 1/2 oz

Thank you! Asopao de pollo?
Awesome video. For thoses that cant find certain ingredients at their local supermarket check your local Spanish bodegas if they don't have them visit your local Asian markets. They usually have all the ingredients as they use them as well in their recipes.
This only the second really good sofrito video (using a food processor) I have seen, I love it, keep the tradition going on. Thank you. I am looking forward to seeing more of your videos.
I cut the ingredients in half to make it for the first time in my home and it smells amazing I cannot wait to use it tonight 🙌🏽
Aida, woman, you had me at the Alcapurias, the Pasteles, the Arroz con Gandules, and you have me at this
tres leches cake!!! I am so excited to surprise mi familia with sheer Puerto Rican magic!!! I will honestly be a busy "JewBaRican " getting ready for a Great Shabbat Estilo PuertoRiquen`o BOOM! XOXO
This is so loving and awesome ❤
I followed this exactly and added it to my "green drinks" In the morning. It gave it a great kick! Thanks! Will start adding this to my food!
Thank you.
Thank you so much! You're probably sick of me already! Glad you found me :-)
Not sick of you at all.....and I'm sure I wont be....right now, I'm on your site and on the phone with a friend as we share your recipe's together........lol
I like your way of doing sorfrito, I made it but I put it into snack zip lock bags, then I put all the bags into one big. and then I put it into the freezer, when I need it I pull out a bag. thanks ,love ya!
Great! I'm going to try your tip, Martha! Thank you!
I do the same thing. Easy to thaw what you need in warm water. I have been doing this for years so my pepper harvest does not go bad on me
I love your recipes they are the best!!!
What a great tutorial! Thank you for sharing a very practical approach to healthy nutrition. Very much speaks to my Midwest, rural upbringing.
@Hector Blanco Thank you so much! That's what I said and decided to make this videi!
I love the way you do sofrito, my mom does this when she cooks, and she doesnt freeze her cuz she just makes enough for that day, but my sister freezes her's, and your ingredients are the true way of making sofrito, it should be chunky not soupy, and i love the ice cube tray idea, i think thats an awesome way to package them up
❤Yummm.mmm I haven't cooked PR food for whiles. Thank you for your time and sharing your recipe ideas.🙏
Glad you liked it. I live in Florida now.

This is the way I make Sofrito thanks to Ida!
Out off all the sofrito recipes yours I think is the best... I can't wait to make your Carne Guisada
Hello from NY! I'm making this tonight so I'll be ready to make picadillo, relleno de papas and arroz con guandules this weekend :)
Vicky Wood an horses Which one? if you go to the bistec encebollado video I make beans and rice there. I have several other videos where I make beans.
@Juan Torres The recipe is in the description! Thank you for your kind words!
Hello Ida
I came across your channel last night. Really enjoying your videos. Thanks
The smell of sofrito is so amazing.
Thank you so much for all the great videos!!! Your awesome!!!!
You're welcome Martha. Thank you for watching!
I really like the ice cube tray idea.
I love your videos. Thank you.
This video is on time thank you keep them coming
Love the use of the freezer. I freeze many different things in cubes.
Omg you have authentic recipes!!!love your channel
Well done, looking forward to learning more about Puerto Rican cuisine,God bless you
Hi.Going to make your pasteles I already have the meat cubed and seasoned overnight.
I love your idea to use food processor for sofrito going to give it a try
I like the texture of your sofrito !
To funny i use icecube trays too I thought I invented this idea😂
Making pasteles is mucho trabajo but so worth it ❤
Thats how my mother and grandmother.
I love ur channel culantro the large leaf is the best i use it for everything even my italuan sauce i use this ingredient for the sauce 😋
I've been making this for years and it's amazing 🤩
First time making this on my own. I love the ice cube method it saves time when cooking instead of scooping it out of a container. Taste good just like my 2nd mom's sofrito she would make so much give it to me never had to make my own til moved away from home and I hate the Pre Made Goya Jar one's at the store they lack flavor
I'm so happy I could help!
Thank you
WOW! Thats so amazing!😊
Making your own sofrito is the best 👌 I learned about two years ago from my grandmother (we do it a little bit different)and i have not bought store made sofrito ever since its not the same Lol.
That looks so good.
I've seen plenty sofrito videos & yours is my favorite. Keep them coming chica! Thank you.
we also add olives, comino, sazon, adobo, oregano. I love all your recipes!
Olives not a good idea to add if you are freezing your sofrito. Olives contain brine. It will spoil the taste. Add olives during cooking process.
I like the way she cooks
Thank you so much for your recipe and writing out the recipe!
Excellent video! Thank you!
LOL!
Thank you! She will love a processor!
wow, thanks Ida...you are a great teacher....I'm not Latina, but love the food and cook it often, but I use the jar sofrito. I've made sofrito a couple of times in the past, but I think I'll be using your recipe and make my own and freeze it. thanks again Ida...love your videos.
By the way, do you have a video on making pernil?
You're welcome! I don't have a pernil video yet. It's on the list of requests.
sweetsandbeyond great...I love making pernil...it comes out really good, but always love to see other recipes. the one I use most is from LatinKitchen. can't wait to see your version.
Mine's better :-)
sweetsandbeyond had a feeling it was...make that video before the summer comes....:)
sweetsandbeyond
yes please please do a Pernil video, I am waiting impatiently
Let’s talk about your NAILS😍😍 Very very healthy and gorgeous omg🙌🏽🙌🏽🙌🏽✨✨✨✨
@reharris904 There are some stores that carry sofrito in the frozen sections. There are also several brands that have jarred stuff. But it's not the same from what I make.
Very cool ice trays I love it
I want some! I don't have access to those ingredients here in Arizona! I enjoyed watching you make the sofrito!
