  • Hi and welcome back! Today I made for you Carne guisada, or Puerto Rican beef stew.
    Here are the ingredients:
    3 lbs of beef stew meat
    1 8oz can of tomato sauce
    1 packet of Sazon Knorr or Goya
    3 large potatoes diced
    1 cup of carrots
    2 bay leaves
    4 garlic cloves
    1 handful of fresh cilantro
    1/4 cup of olives
    4 cubes of sofrito or 4 tablespoons You can watch me make sofrito here: • How to make Authentic ...
    1 teaspoon of cumin and oregano
    Adobo Goya to taste
    2 tablespoons all purpose flour
    3-4 cups of water
    2-3 tablespoons of canola oil

    I'm 64 yo Puerto Rican who left NYC at 7 and grew up in LA before joining the Navy. I was 21 when mom passed and all her recipes died with her. I'm so grateful to this lady for bringing these dishes to YT, God Bless her, she's wonderful. Gracias Mijita from a deep place in my heart.

    Ive been watching this video since 2020. Growing up hispanic my mom would always make dishes like this but never allowed anyone near the kitchen! So now as an adult living w my husband i struggled to make traditional Latino meals. Everytime im in mood for Carne Guisada (even tho I've been making it for 3 yrs now😂) I always come back to Aida's video to MAKE SURE I'm doing it right ❤. Thanks mama!

    I’m fillipino and my fiancé is puertorican from PR so I’m not used to cooking Spanish food and the first time I made this dish for him I did a few things different to his style of taste and he said “ this is the best I’ve ever had even better than my moms don’t tell her tho ! “ all because of you lol!     I have cooked American food for so long that I have lost my Puerto Rican way of cooking, but now I found my way back. Since my mom has passed away a long time ago I couldn't remember how she made all those dishes that I loved growing up as a child. My husband is Irish and he loves Puerto Rican food. My two adult kids love it as well but now my daughter is cooking some of these dishes as well. Thank you Ida for helping me get back to my cooking roots. Your videos make it easy to follow.

      I like to put all my seasons fresh, not getting it from a bottle that is been there for weeks and you put cilantro in everything, i guess everything that you cook tastes the same

      I used oxtails, that's all I had. Followed the directions exactly but extended the cooking time and put in the carrots and the potatoes 20 mins before the end of the cooking time. It was AMAZING! Thank you!

    We use a splash of old red wine or orange juice in the meat before we cook for 30 to 45 to soften it up. It doesn't effect the taste at all but it helps tendering the meat.

      I add a pinch of baking soda once everything is in the pot, makes meat tender

      I use white wine to up the flavor. Some people add grape juice but I don't like that. I drop the tomato sauce and use paste instead.

      Fuck yeah man! Marinate any meat in orange juice and lime juice. Adds great flavor and tenderizes it perfectly! The ratio I use is 1 whole orange and 3 limes for every 1 pound of meat. Add olive oil and any seasoning you want for a solid marinade.

    Reminds me of my mom’s cooking. I turn to your videos when I need a little refresher, and you never disappoint. I still watch even your old ones like this one, which I’m making today.     Making this for dinner tonight.. my fiance always says he misses how his whela would cook stews and soups all the time so I figured let's try the PR version of Beef stew that I always love when my father makes. I am french so this is a little different but I am sure ot will come out amazing. So far I have mastered rice, chuleta, ribs, pork shoulder. Excited to add this to the list of home cooking he will enjoy along with our son❤ thanks you for the recipe so excited

    I think you so much for video. I’m lived in Nyc most of my life but moved to South Carolina and they don’t have a bodega or Spanish restaurant. All they have is Mexican. so when I made this last night with a twist meaning adding onions and green and red peppers with red rice and beans. It was awesome and taste like I was back in Nyc or home with my family in PR

    I make Texas style carne guisada with green bell pepper and of course onion, cumin. fresh tomatoes and sazon. I guess the difference between mine & yours is you use olives, sofrito & adobo. My daughter had a friend who made your style for me once & it was AMAZING!! I could never figure out the ingredients. this girl moved away so I never got the recipe, but my daughter hooked up with her again(thanks to facebook) not too long ago & got the recipe...It is JUST LIKE YOURS!!!! I love this because I can actually see you make it...WHAT A TREAT!! And you gave the ingredients below so that helps even more. I don't watch peoples video who won't give the recipe & instead try to make you go to their website. So Thank You for that TOO!!! Can't wait to see your other recipes!! And I'm subscribing!!

    I was friends with a Hispanic girl, and another lady at my job. When I first moved out on my own, they always brought me leftovers. My friend always brought me this or chicken stew.     I am born and raised in Ketchikan Alaska, met my Puerto rican boyfriend over 2 1/2 years ago and have falling in LOVE with the puerto rican flavors! He took me to PR to visit and try all the foods and tastes, so I can make when we are home in Alaska. it's hard a lot of the time, not the right produce or Goya products I need, but I love your videos and so does my bf, since it's just like HOME to him!! Thank you and keep up the great videos, they have helped me so much, since I am just learning this way of cooking.

    Thank you for your clear and simple instructions, along with your ocd neatness. I appreciate you sharing your culture with me! I feel like this is very authentic especially because you are from Puerto Rico and you have a deep knowledge of the natural spices and ingredients not just what seasoning packets to use! I like that you clarify what has MSG in order to connect this dish to people who ordinarily avoid these dishes because of said ingredients. I found that many people may not take PR cookery serious because of the overuse of MSG and store bought seasoning along with extremely high fat and sodium content. I always thought that they were wrong for ignoring how utterly delicious and well developed these recipes are! You show us how to regulate what is actually useful and what is too abundant and that truly solidifies the meal. I especially like that you not only teach how to make sazon, adobo and sofrito but then clarify that recaito is uncooked sofrito, pre-tomato base. I have been wondering this myself for a long time and just assumed one was culantro based and the other tomato. You have really boosted my knowledge for PR cuisine. My ex gf's mother made the best Latina food and I always tried to learn from her as much as possible. Now that we are no longer connected, this truly has become my resource for my recipes which I must say, I dont need to even add anything to yours! Everyone at home says its delicious, and I always give credit to this channel as my best kept secret! Cheers From Brooklyn, NY!

    I’ve been making some of your recipes for YEARS, I still need to reference the videos because I don’t recall how to cook it by memory 😆. My mom was a traditional Puerto Rican woman who never had patience to teach me how to cook. She just passed away. And your recipes, like this one reminds me of home aka mami.     This is one of our favorite meals 'carne guisada'. My kids and husband love it! I like how you display the ingredients from the beginning and you explain step by step on how to proceed. I am Puertorrican with some Irish in the mix lol. We recently moved to Sweden and although I can find cilantro here during the summer it is of course not as flavorful as fresh from the garden I try to freeze the cilantro/sofrito as much as I can. !Gracias por tus fantásticas recetas Aida!

    We do use the peppers and onions, they are in the sofrito... but not the celery. Is just that we puree it with other ingredients. But if you take the same ingredients and cut them with your knife, it will taste the same. The reason for the celery is because is a french technique of cooking called "mirepoix", which is like the french sofrito, if you want to call it that.

      Yep, We also use "pimiento morron". I add cumin. Cumin is use in the country side on the west region of PR in all guisos and fricassees I like her technique though. I have tried celery and I personally like that variation.

      i.rodriguez, correct, we use the peppers and onions , but you don’t see them, cause they are used as a base in the sofrito. You are also correct about “mirepoix” almost being like a french sofrito. An authentic “mirepoix” only has three ingredients, but in a precise ratio. The ratio is 2:1:1, for example, two parts onion, one part carrot, and one part celery. In culinary school it is one of the basics and will absolutely be one of the first things taught. I use a “mirepoix” in almost all soups and stews, unless like this one, it doesn’t call for it in the recipe, it would absolutely change the dish. I’m not saying it wouldn’t taste good, I’m just saying it wouldn’t be the Puerto Rican Carne Guisada you are striving for utilizing this time tested recipe. Good luck to all who are doing it for the first time.

A sure winner for our family and I have tried other recipes for this. None compare to yours! My son will come downstairs because he smells the goodness and he already knows what I am making.     Ida, thanks for mentioning the number you use to cook the food, for those of us that can't cook SIMMERING can be a task on itself, but knowing that I need to put it on 5 and then 7, wow I can be a chef now. thanks and I just subscribed, I miss my grandma's cooking so much, I will try cooking this this week. on another note, love your nails,

    I'm Mexican and we don't use sofrito in our foods, I'm not even sure what it is, lol But we do make carne guisada. :) cant wait to try to make this :)

    I made the Carne guisada today and it taste amazing. My neighbor is a older spanish lady and she said it taste just like her's. She also said her daughter's don't know how to cook like that but I do. Like I say before KEEP UP THE GREAT WORK!!!!

    Oh my goodness I just subscribed to your channel. This looks delicious. My daughter is Puerto Rican (20 years old) but I'm Mexican and her fathers family live in another state. I never have learned to make Puerto Rican food. I'm so excited to learn from you.

    Se ve delicioso! La sazon Portorriquena es muy parecida a la Venezolana, asi que veo muchas semejansas :) Yo hago caldo de huesos de res con frecuencia y lo uso en vez de agua y le da un sabor intenso al guiso. Pero veo que logras el mismo resultado con el sobre de sazon y el agua. Que rico! Gracias por mostrar tu manera. Ahora tengo hambre :)

      I'm 59 years old I have never seen my great grandmother, grandmother or mother, or the women of those generations brown the meat before stewing it n believe me they were great cooks. Pero, I guess to each his own. You should make a video on carne mechada.

      You can, but be mindful of the salt content.

      Adobo is already very salty. I would substitute one cup of water for beef broth instead of all the water. I will definitely be making this!

    You are very wise to use Knorr seasoning, Goya has changed its Sazon...don't know WHAT they added but it almost ruined a few dishes, it lost that Puerto Rican good old flavor..Gracias!!!
