Just 2 eggs! Tutorial for beginners to make soufflé pancakes that melt in your mouth

Let’s be honest, making tall, thick and fluffy pancakes is not easy, especially for beginners.
After practicing many times, I found that using a non-stick pan is actually the easiest way to make it.
Hopefully this video will help you make delicious pancakes and learn some useful baking tips. Important tips are also included below.
Even if your pancakes aren't quite fluffy, they'll still be delicious, so I hope you enjoy cooking with me!
📢 Recipe (ingredients)
2 eggs
20g milk
30g low gluten flour
lemon juice
20g sugar
edible oil
syrup
frosting
*Beginners are advised to use a non-stick pan.
*The whole process is on low heat, first for 5 minutes, then for 4 minutes
*The egg whites should be refrigerated before use. Adding lemon juice can make the egg whites more stable (you can also use a little vinegar instead)
*Beat the egg whites until they become dry and foamy. The cake will be thicker.
*It is not recommended for novices to make thick waffles with two layers of batter stacked on top of each other. It is easy to cook undercooked and difficult to flip.

我的蛋白都很難發
這麼好
打發要注意這幾點(可能有點囉嗦)
1.容器要無水無油,蛋白裡盡量避免有蛋黃,選擇新鮮雞蛋,油脂和水分會影響打發
2.蛋白一定要冷藏以及添加玉米澱粉(可選,一般是1茶匙即可)、糖、檸檬汁、白醋可以提高穩定性,幫助打發
3.新手不建議用高速,我試過特別容易打發不均勻,而且不容易掌握狀態
4.打蛋器功率不夠,打發耗時過長,蛋白反覆摩擦溫度升高,容易不穩定導致消泡(超過6分鐘都沒打發起來,就是功率太低了)

還是小火開了麵糊就可以下去了,謝謝🙏
請先小火把鍋加入到170度左右,也就是把鍋燒熱到撒點水就吱吱的干了,就可以下麵糊了,之後一直保持最小火,如果火候只是在中心,請時不時移動一下鍋,可以讓蛋糕均勻的受熱。

If you don’t have low-gluten flour, you can also try using ordinary flour. The gluten content in ordinary flour is higher, which may slightly affect the taste and rise of the cake.

為什麼我的第二次開蓋就會塌掉
應該是蛋糕還沒完全熟透,蒸氣迅速逸出,導致蛋糕失去了內部的支撐,從而塌陷。
下次可以增加多一點時間延遲打開蓋子。

What kind of flours are low gluten flours?

Why need the lemon juice?
The citric acid in lemon juice can change the structure of proteins, making them more stable. It can also remove the fishy smell of the eggs themselves.

這個原因有很多的可能性,可能是溫度,時間,火力等都有可能導致這樣的情況出現
要注意的點是:
1.煎好後盡量在肉眼可見定型後再嘗試開蓋(或者是根據我給的時間增加多1-2分鐘),過早開蓋會讓內部過度膨脹而導致塌陷。
2.火力過大,舒芙蕾底部過快凝固,而內部仍未充分膨脹,容易導致塌陷。 控制好火力(最小火,如果是鍋底受熱不均勻,就移動一下位置),保持適度的溫度,讓煎餅均勻受熱。
3.舒芙蕾的大小:煎餅的大小也會影響翻轉和穩定性。 如果煎餅過大,例如直徑過寬,自身重量會導致煎餅塌掉的可能性增加。 盡量控制煎餅的大小,使其易於翻轉和保持形狀。
4.麵糊太稠,煎餅在烹調過程中無法充分膨脹,容易塌掉。

面粉比例錯,雞蛋比例又錯
非常抱歉這個影片的配方讓您不滿意,但是配方我自己親自做過的不止一次沒有一次是失敗的,關於雞蛋和麵糊這個比例,可能是有些雞蛋比較小導致這個量的麵粉會讓麵糊有點稠 ,你可以增加一點牛奶去調節,狀態以濃稠可以滴落,沒有顆粒狀態為準,但不是要稀!
