I've been vegan for nearly 4 years now and I try to eat a mostly whole-foods diet. Perhaps a better way to put it is, I try to eat between 5-7 whole foods for lunch and also dinner with some fun on the side (as you see, I ate rice, flour tortillas, and chocolate in this video). The meals I made in this video are my absolute favorite-- I hope you enjoy them too!

Ingredients:
Breakfast: Protein Smoothie
1 frozen banana
1 scoop (2tbsp) Garden of Life Chocolate protein powder
1 cup vanilla almond milk
1/2 cup water
Lunch: Veggie Stir-fry
2 cups rice
2 cups water
1/2 onion (diced)
1 head of broccoli
2 ribs of celery
2 medium carrots
1 bell pepper
1 medium zucchini
1tbs apple cider vinegar
A drizzle of syrup
1 tbsp peanut butter
3 medium/small cloves of garlic
2 tbsp liquid aminos
1/4 cup of cashews (or more)
A bit of bok choy
Some scallions
1 tsp sesame seeds
1 tsp ground ginger
1/2 tsp crushed red pepper
A drizzle of sesame seed oil
A swirl of sriracha
Dinner: Veggie Tacos
Tortillas (flour or corn)
1 diced onion (save 1/4 for guacamole)
1 can of corn
1 head of broccoli
2 medium carrots
1 can of black beans
1 tsp smoked paprika
1/2 tsp onion salt
1/2 tsp red pepper powder
A bit of your preferred hot sauce
Some of your favorite salsa
1 diced tomato
1 chopped bell pepper
1 finely diced jalapeño (if you like it spicy)
Guacamole:
2 small avocados
1/4 of a diced onion
1 tsp of lime juice
1/4 tsp salt

When I first became vegan, tacos were my go to meal! I love just about anything on a sprouted corn tortilla! 🌮The rest of my family is not vegan, but tacos are something we can all agree on! 😊

I definitely need to try that stir-fry sauce! For some reason I never think to buy bok choy but it looks so good in that stir-fry! I’m always looking for new plant-based recipes so these kinds of videos are super interesting to me.

Flavor is EVERYTHING!! Hahaha, I'd say we eat, carrots, onions, broccoli, and zucchini in just about every lunch & dinner meal 🤪
I love watching the cooking clips of your videos! I never thought that I would be a person who would enjoy vegetarian meals, much less vegan, but you've made it look so easy, fun and delicious that I've been excited to try your recipes! I like to drink the smoothies during the warmer seasons, I've tried the veggy curry from your last 'what I eat in a day' video, and the veggie tomato soup! Each were easy to make and so tasty! I'm excited to try the recipes from this video as well. Also, can we talk about how beautiful that red and orange bell pepper was?!

Yum!! I’ve been vegan for two years and just started misfit market which has been helping me incorporate new vegetables into my diet. I’m definitely gonna try that veggie stir fry today, it looks soooo good. I also get dark chocolate almond sea salt bars from target, I can’t remember the brand, but it’s my favorite sweet snack!
Loved this Mo! I've been vegan for about the same time as you, so seeing vegan recipes, especially ones which are quick and simple is a treat - more please 🙂 I have the same bfast every day too. I use a normal banana but put an ice cube in. Sometimes I add cocoa or coffee powder if I fancy a different additional flavour. Never get bored of it!

I'm so familiar with this feeling!! Seasoning makes allllll the difference. Sesame seed oil has been my new go-to...before I started using it, I was very tired of stir-fry.

Ah, so good for you, Julia! WFPB is such a healthy way to live! I love the challenge of not using oils! The stir-fry would be oil-free if I hadn't added sesame oil at the end (I love the flavor). I'd love to do a "What I Eat in a Day-- all raw, whole foods" video! I just need to find satisfying meals I feel confident enough to share.

Your meals look delicious. There are some really good vegan lentil tortilla (taco) soup recipes on Pinterest. Soooo good and hearty for winter. I had to LOL when you pulled out the whole frozen banana. I always halve or break them in 3rds. That was so funny to see for some reason 😅💜

Such a fun way to show what you eat in a day, I always love your artistic style! I'm not vegan but could be, haha, if that makes sense, my family loves meat so I cook meals for them and then I'm too lazy to make a separate meal for myself. I don't really enjoy meat at all.
Landon is also vegan and that makes it SO much easier-- I can't imagine trying to eat plant-based while also cooking meals for a my non-vegan family.

I hope you love it! This dish is actually how I learned to cook! I can remember so precisely measuring out each ingredient and worrying that any missed bit or out of order thing would entirely ruin the meal. Now I just throw whatever in and call it a day!

I am intrigued by the vegan diet and lifestyle especially after making so many swaps due to a milk allergy. May I ask why you chose to go vegan? Has it helped and improved your gut health and overall health? Just curious!
Similar to you, I went vegan for health reasons originally but then the more I learned about how good it is for the environment and obviously for animals, it made me more inspired to stick with it! And YES, it has been immensely wonderful for my gut health!! And for overall health, it has varied. When I do it right, I feel so healthy. But there have been times when I just ate very unhealthy even though things were vegan (like oreos) and wasn't getting the proper nutrients I needed. I'm always learning how to eat in the best way for my lifestyle. Good luck with you journey!

Morgan, I am a "health nut", too...lol. I used to be a vegan, now I just eat grilled chicken and turkey, occasionally. However, I still focus on eating healthy and getting enough fruits and vegetables in my diet. It is good to see that you are health-conscious, also. What we put in our bodies will determine our health and body composition. Also, combined with exercise and yoga/meditation, it will enhance your self-esteem. This is a known fact. Continue your healthy eating and meditation.
I feel sooo much better when I eat healthily and I'm more confident as a result! I also feel more inclined to exercise and then I feel motivated to be productive! So much good comes of eating mindfully ☀️
