Since I cannot taste what is cooking, I shall not comment on the culinary flavours, but I certainly admire how he uses the change of momentum of the mass in the pan, using the quick upward motion and gyration by slapping the mass on the curved side to flip the contents 180 degrees, undulating the wok in his left hand and at the same time stirring the contents with his right. There is not the slightest chance that one kernel/grain of rice will not be well cooked. I was wondering about the mathematical probability of that action that 1 in 100,000 kernels/grains of rice will not be done.............that manual action is even better than the action and reaction when mixing the aggregate in a concrete mixing machine rotating at a continuous rate. There is a lot of mathematics in that kitchen with permutation and combinations and chemistry reactions and last but not least the thermodynamics and the engineering tools, including how the flame is buffered at the front to protect the cook, but it has ample flow at the side to sustain the flame touching the wok. I bet those people in the kitchen get tired more than a pilot flying a Bowing 747 on automatic pilot, \ and GPS, and what is more, those cooks are even more responsible than the pilots, as after all , the pilot got to eat, and his life depends on the cook. The workplace, society in general and the individual that needs to fit the bill, is an extremely complex machine of many variables that no human mind can predict the outcome. or the near future as there are so many states and their higher rate of changes and integrals to consider in a space time domain and yet they keep the cooking and servicing transfer function pretty much stable, I am not trained to handle all those functions that I see in that kitchen. All the best to to those who had anything to do with this video. Congratulations. There is more activity that in a cockpit. of an aircraft or the deckhouse on a cruise liner, for it is all manual and the cook is closer to the fire than a pilot is to the burner of a jet engine, . ..

一つだけお聞きしたいことが出てきました。
濾した油は、その後、何かに使われるのか?です。

または、使えないものとして、廃棄するのか?

would be good to know the names of the restaurant. The first one is called "Japan Tokyo Shimbashi Ranen Hotel" but a Google search results in dozens of Shimbashi Hotels with restaurants.
Would love to visit these restaurants if I could identify them!
The first restaurant is already closed. The second one has 3.6 rating on Google. The third one has 4.2 rating on Google. Their are far from the best.
