    What strikes me as so beautiful about Japanese work-culture is that they will take any culture- and craft and push it to its limit. Doing it so well that even people native of that culture will laud their craft. I've seen French compliment their croissants and bread, I've seen Germans compliment their sausages. It's quite beautiful to see and makes me feel proud of our species.

    11:49 As a Dutchman I can smell the goodness of that sausage through the screen and it makes me hungry. Like the Germans, we Dutch like our sausages as well. Smoked sausage in particular. So, so good. I appreciate this Japanese master giving this north western European tradition respect and love.
    It does not surprise me at all that he won gold at the world championship.

    A German from Saxony here.
    Very awsome butchery. I don't think, there can be any complains about the products.
    And a great respect to the Mr. Ishii. What a hard working man. And to the master himself and all his other employees too of cause.👌
    I love Japan since I was 11 years old and it took me till I was 40 years old to visit this beautifull country. Next year I turn 46 and hope to manage to visit Japan for the third time.

    As a german i can say this man is a grandmaster of his profession and it's a pleasure to see that he evolved his studies from germany. He can mess with every butcher in my country... in the world. Very impressive!

    It doesn't really surprise me that he won the German sausage contests -- his attention to detail and quality workmanship are the hallmarks of Japanese products. His shop is on my bucket list!

      guten morgen. schön zu lesen das sich Leute für den Beruf interessieren. ein ratschlag auf deinen Weg. Bewirb dich einfach dort wo es dir am besten schmeckt und schau das es ein möglichst kleiner Betrieb mit großer Palette ist. Mittelständische Betriebe, Lebensmitteleinzelhandel und Industrie würde ich dir nicht empfehlen

      @@rudis_resterampe2335 Danke für den Tipp!! Will aber auch eine Zeit lang auf industriellen Ebenen Metzgern und Schlachten. Mein Ziel wird es sein, anthropologische Forschung zur Beziehung zwischen dem Mensch und dem Tier als lebendes Fleisch zu machen. Und der düsterste Teil davon ist in der Massenfleischerei, wo weder Arbeiter noch Tier mehr sind als leblose Objekte in den Händen des Konsumkapitalismus und der profitgierigen Großkonzerne.
      Davor werde ich zum ,,ordentlichen" lernen des Handwerks aber definitiv deinem Ratschlag folgen.

    I really appreciated the way Hata San explained the yse of the natural casings and why there may be some faults . His sensei in Germany must be filled with pride to see how Hata San is putting all he learned into practice, passing his knowledge on . A great video. Thankyou .

    I am A old German Sausage Maker I like His way and it is so convincing i am sure the taste is incredible I do not have the Beef Meat here in Philippines not yet but I can Improvise this trough knowledge.       As a Filipino I am sure many Filipinos would appreciate and buy this kind of sausage. There's too many artificial sausages with lots of preservatives here and does not taste as good...

Long live the Japanese culture that sets the standard of near perfection (if not perfection) worldwide in a "sad world" of mass production.     When I see someone in one Country making traditional foods from another Country, I am happy to see it and I am sure the customers are very happy too. Making some national recipes are hard to do because either you cannot get all of the ingredients you need, or you need some sort of a specialized kitchen equipment or that it is just so labor intensive that you don't want to undertake the challenge.
    This where a specialty shop like this comes into play and it is all made in a homestyle fashion, just on a larger scale.
    I have a German friend of mine here in Thailand that bakes authentic German breads, and he lives about 1hr 20mins away by train. But I can place a big order with him, and he will meet me at the train station and give me a tour of his city and show me his operation and we have a nice lunch and beers together and then he sees us off on a bus home with all of the goodies he baked for us and I am as giddy as a kid finding a 4-leaf clover. You just don't get service like that except at a home-grown operation from someone that is putting passion into their foods.
    I would spend a lot of money in a place like this and stock up and visit often.
    Decades ago we had a small German bakery/Meat place that opened in an old convivence store location that did it all like this, but on a smaller scale and made authentic German desserts too, it was a fantastic place to visit and spend my money. But sadly she closed.
    I have an authentic Mexican restaurant run by an older woman and her family that is to die for and also a great Asian food store that does things similar, but on a smaller scale too.
    So, if you have any places like that in your area, even if you have to travel some distance, it will be worth your while to visit, purchase and get the real deal from them no matter what Nationality of goods they are producing.
    Recently in my city, an Eastern European store opened that carries sausages from Poland, Cheeses from Bulgaria and Wines from Ukraine just to name a few and I can drop $200 USD very quickly Ha ha.

    I would love to some day be able to sample all his creations.
    The way he carries himself is a prime example of how you should share your pride, kind and loving.

    I am an American who has lived in Japan for five years and I am not surprised at all by this guy's skill. I have found most sausage in Japan to be excellent. The only kind I miss is sweet Italian sausage which I have not been able to find here. On average, Japanese sausage is better than that found in the US.

    As a person who love Sausages, i live in Denmark.
    I always grill my sausages before eating, i know they are smoked, but i do grill them insted of boiling them. i Think the taste is so much better and the crispy skin takes it to the next level.

      Knackwurst is already crispy. If u grill it, you destroy it. It has to be cooked. Weisswurst is simply made this way to be cooked an this is how its meant to be prepared (its form Bavaria) And Frankfurter should not be either grilled or cooked. Bratwurst, Thüringer etc. are made to be grilled.

    Appreciate the skills of the folks very much. Have been to Japan many times and it is a superclean place but nevertheless it's really better when handling raw meat destined for consumers to use gloves.

    The marbling of that beef jerky is amazing...I know it will be so tender and soft!...but the real western beef jerky is supposed to be dry and tough....this is what travelers ate when they went long distances and ahd to pack something to eat.

    이분을 제가 직접 뵙는건 힘들겠지만 영상을 보면서 몇가지 궁금증이 떠올랐는데
    1. 맛있는 소세지를 만드는 공정에있어서 독일 이외의 나라에서 환경적인 불리함이 있는지
    2. 제빵에서 빵반죽에 들어가는 물의 맛이 빵의 맛에도 영향을 끼친다고 들었습니다 영상에서 치즈소세지 반죽을 만들면서 얼음을 많이 넣었는데 특별한 얼음인지 궁금하네요

      소시지는 아니지만 1년에 목우촌에서 명정때 선물용 햄이 선물세트로 나오는데 그건 진짜 맛이 있음
      일반 시판용이 아닌 진짜 고기가 십히는 햄!

    That fact that this place is in the middle of nowhere and not in some upscale part of Tokyo surprised me. I will certainly pay a visit.

    コンビーフの製造過程で牛肉の煮汁を捨てないで肉に戻してるの見て感動した。
    市販のコンビーフだと煮汁は捨てて、
    後から調味液を混ぜるの知ってたから。
    美味いんだろうなあ、通販は中止してるみたいだけど食べたいなあ。
