Spanish Chorizo Omelette | Good Food Good Times World Cup 2014 Special

- Spain may be out, but our World Cup recipe countdown continues! This week it's a Spanish omelette with chorizo.

PREP: 10 minutes
COOK: 30 minutes
SERVES: 4
INGREDIENTS:
500 g new potatoes
1 onion, chopped
150 ml olive oil
3 tbsp fresh parsley, chopped
6 eggs
200 g chorizo, chopped
STEP 1: FRY THE POTATO AND ONION
Heat the oil in a pan, then add the potatoes and onions and cook for about 10-15 minutes, stirring the whole time.
STEP 2: ADD THE CHORIZO
Once the potatoes are soft, add the chopped chorizo and cook it down for a few minutes.
STEP 3: DRAIN OFF THE OIL
Pour the mixture into a colander over a bowl to drain off some of the oil, then tip it into a new bowl.
STEP 4: RETURN TO THE PAN AND ADD THE EGG
Tip about half of the reserved oil into a new pan, then return the mixture to the pan, press it down, then tip in the beaten eggs and top with some parsley, salt and pepper.
STEP 5: FINISH IT UNDER THE GRILL
Once it has cooked around the edges you can either flip it (risky!) or just pop it under the grill for a couple of minutes until firm.
Loved the chorizo kick added in this one, for a first attempt happy with how it turned out - any Spaniards fancy letting me come and make one in your house let me know!
As a Spanish woman, while I was watching the video I was like "it's not how it's done!" XD Looks delicious anyways, and it's always interesting to see how other countries cook typical Spanish dishes. Spanish food is super yummy - and I'm not only saying this because I'm Spanish ^^U -, and I'm happy you've decided to feature Spanish omelette in the channel :D

Imo, you could put less oil taking into an account that chorizo has fat, and then you don't need to drain the oil. Mix your potatoes, onion and chorizo with the beaten egg, wait 5 minutes and then fry the omelette directly.
This isn't a Spanish omelette, is another thing... . Spanish omelette NEVER should be introduced in the oven, It must be cooked only in a pan. And also, the potatoes are cut in enormous pieces!! Noooo!
Spanish potato omelette only has three ingredients: Eggs, Onion and potato (ok.. and salt and olive oil)

This is NOT an spanish tortilla. The real spanish tortilla have only potatoes without skin and in small chunks, eggs, onion, olive oil and salt. NEVER chorizo.
So what happened to the rest of the potato, chorzio mixture? You didn't use all of it and it seems to disappear. NOT a good recipe.
This recipe will make a couple of omelettes so you simply add the remaining potato and chorizo to a second omelette. Waste not!

thats just way too greasy, instead of "frying" the potatoes, boil them in water for 10-15 mins your heart will enjoy it better
