    Just discovered this guys channel but also made the unfortunate discovery that he’s passed away and not going to lie, that nearly brought me to tears for someone I barely know.       I saved my butter pickle juice then when I have enough I added red pepper and pepper corns add the rin. After a week wow delicious.

      I would say it is because Steve passed away in Dec of 2018. He is greatly missed, he truly cared about everyone who took the time to watch his videos

    This was the first video of y'alls that I've ever watched just a few minutes ago. I fell in love with his passion and with his love for his Sheila. As I scroll though the comments to see what everyone thought of this video, I sadly learned that he has passed away. 😳😢 and I'm heartbroken. God bless you Sheila.

    🍉I grew up eating pickled watermelon rind. We made it with boiled sugar water, touch vinegar, whole cloves, allspice berries and cinnamon sticks. Then we processed the jars. They were ready when the rinds were translucent and had a green cast to them. We also scraped all the red off. We either ate them right out of the jar or with cheddar cheese and crackers. 😋😋😋

    I made this and it's fantastic! So you can quickly figure out if you have all the ingredients for the brine, they are: 1-1/2 cups (each) of water, apple cider vinegar, and sugar; 1/2 teaspoon red pepper flakes, 1 teaspoon black peppercorns, and 3 tablespoons Kosher salt. These measurements gave me exactly enough brine for 2 quarts with about half an inch of headspace. I'm planning a "picnic for 2" for the 4th of July and we will very much enjoy these watermelon pickles. Much love and honor to the memory of Mr. Shotgun Red!

    Greetings from Hungary! I love pickled grinds, The way we do it here, is to boil salted water, (1 liter - 1 tbs salt), cool it down. Put fresh dill, 2 cloves of garlic, couple of black peppercorns and some mustard seeds in the jar, put the cleaned grinds in (I usually leave them in long stripes, resembling cucumber stripes) and leave them in a cool, dark place to ferment (usually 2-3 days). You have to let the gases out from time to time by unscrewing the top, maybe once a day. Then it goes to the fridge, lasts for about 2 weeks, unless it's consumed earlier! :-) I will definitely try this version, too. Thank you!

    Watermelon rind is SO good for you. LOVE this video and LOVE this recipe and the chefs personality. I too did not know he passed away and I am so hurt. I am in prayer for his wife and family. This is terrible..BLESS you.

      @@vonnaanderson4036 Thank you!! Cinnamon stick was the ingredient I was struggling to remember that my Grandma used in these. Allspice berries, too, I think. No hot pepper.....but that would be an add-on I would surely enjoy.

    I picked up a baby watermelon yesterday. Cut it up and made a batch up last night. Just rewatched the video this morning and couldn't resist. Opened the cute Miss Shelia sized jar : ] this recipe was easy pleasy and came out really good. The jar sealed. They were crunchy and the taste is superb...the rest will be ready for the 4th and I can hardly wait. Thanks to all at Cooking with Shotgun Red and I hope you girls keep this page going.

      Oh yes pickled watermelon rind was pretty common in older generations,along with tomato preserves,cantaloupe preserves,pickled peaches,course pickled pigs feet,eggs,& most all other vegetables or fruits.

    What a lovely guy. A real gem. I had never watched a cooking session in my life by anyone, and by chance, in looking for something else, I came across this video. Suffice it to say that I found Steve's personality to be unbelievably endearing. He was absolutely hilarious and super friendly and explained everything so clearly. I'm not a cook by any stretch of the imagination, but I WILL be following his recipe for pickled watermelon as soon as I buy my next watermelon. As for his passing, which I found out by reading the comments below, it really touched me, despite having just "met" him 30 minutes earlier. What an injustice. A wonderful human being like that, who gave so much pleasure to all around him, to die way too early in life, when there are so many evil people in this world who live to a ripe old age, and do nothing but make other people's lives miserable, and revel in it.     Thank you for this. I plan to a batch in honor of my grandma who died on this day years ago when I was 19. It's on of the things I couldn't wait to dig into when visiting grandma, along with her cucumber pickles. It always seemed to surprise her that my two brothers and I would eat so meany in one sitting!! She was overcome by cancer way too young in her late 50's. I didn't get a chance to get her recipes before she passed on, so this helps me to relive the good times and help me reconnect with her. God bless you and your family.

    This looks like a recipe that I have always hoped to find. I like watermelon and have always hated throwing the largest portion of the fruit to the garbage. I like to try new foods and this pickle is now going onto my menu.

    I love anything pickled, so I can hardly wait to try this! BTW, if you and Sheila like salt on your watermelon, you should try sprinkling Tajin on it. It's salty, spicy and has a hint of sour. Yummy!

    Always wanted to make this but no recipe when I was young and working! Now I am old and in shut down with the corona virus going on, so been checking out ALL your pickling recipes. So soon as I can get out of "LOCK DOWN" and get to a store, making your tilapia and eggs and this one, thanks for all your wonderful recipes, always good stuff! would like to get a peek at Sheila one in a while!

    There is a favorite restaurant in Madison Indiana called Key West Schrimp House that always had pickled watermelon rind. A change of ownership and they stopped carrying them. Now I am free to make my own! Thanks Sheila!!

      I fell in love with PWR at neighborhood pizza place who had it on their salad bar. I couldn't get enough of it and I feel the same way about candied ginger as well as Major Grey's chutney. There's an intriguingly complex flavor mix of sweet, salty, sour, peppery and/or spicy. It's never boring.

    Just like my mom use to make. Thanks for bring back such good memories ❤️. We as kids were so excited 😊 to help mom do this because we knew it was going to be great.       NOooooo!!! I’m so sad to hear this! I just found him by accident. He has such a kind, gentle spirit. I watched his “Cucumber Salad” video on repeat while I made it. I am so sorry to hear that he is not with us in the same way. He obviously cares about Shiela. She has been blessed to have him. What a sweetheart, and someone that is so good on camera.     The reason why this works so well is because watermelons are closely related to cucumbers, with both being in the same family Cucurbitaceae.
