Pickled Watermelon Rind !!!

  • This is a true southern recipe. It will be a favorite at family reunions, family gatherings, picnics, and a must have refrigerated item. So, don't throw away those watermelon rinds anymore. Enjoy.
    Brine:
    1 1/2 cups of water
    1 1/2 cups of apple cider vinegar
    1 1/2 cups of sugar
    1/2 tsp of red pepper flakes
    1 tsp of black peppercorns
    3 tbsp of Kosher salt
    2 tsp of coriander seeds
    **This is a refrigerated pickled recipe

    I have pickled watermelon rind for many years. My critique is NOT a criticism but rather an observation. If you combine water and vinegar to boil, the water boils at 212°F while the vinegar at 244° F. The end result, concentrated vinegar. Also, puree the watermelon to add instead of water creating the best pickled rind you've ever tasted. If you want pickle-like crunchy rind, and a tea bag or preferably a couple of bay leaves to the jar. Nice starter video. Thanks for spreading the word.

    Pastor this is my first time seeing your channel. Pickled watermelon rind is so good. Just one suggestion please don't use your brine to clean the top of your jars as it has sugar in it and will affect your seal. Especially if one stores it on the shelf.
    Of course I'm sure the pickled watermelon rind will be eaten quickly.

      You can! The consistency will have more of a softer taste. The crispy taste comes from storing in the refrigerator. Try the water bath. Let us know how you like it🤗.

      Maria, you absolutely can. I like the crispy texture from storing in the refrigerator, but storing for later by using the water bath technique will work too.

    Oh yeah, I forgot- grape leaves work just as well as bay or teabag.
