Here in Canada at the grocery stores, 00 will often be higher in gluten for its elasticity with a variation of about 11-13%. In return, I would like to share something might be new to you: Like spaghetti being quintessential in America, macaroni (in chinese: 通心粉 or 通心面) has also mysteriously become quintessential in areas with large Chinese populations open to Western cultural influence. Instead of going into some Italian restaurants, you can find macaroni commonly served in the breakfast menu of local restaurants and even fast food restaurants chain (although the recipes of those dishes are highly localized).
An interesting fact is that in south italy (especially sicily) penne without grooves are more popular (especially among older folks) because they require less sauce.

I suspect you mean “Ammaccare” that means exactly what you say. I have purchases rigatoni and ziti in the USA, and they are different. The rigatoni is what Prof. Dave described in the video, but the ziti are longer thinner tubes with a smooth surface (no groves).

I select pasta after what sauce (ragu or meat) I want to eat, I do like spaghetti bolognaise but I think there is better pasta to use for bolognaise like Tagliatelle, and I agree with you that it is a shame that just spaghetti became a bit to popular in America and other parts of Europe so it start to find the other pasta.

Ortzo looks alot like ptitim. ptitim (or isreali cooscoos) where invented in isreal in the 60s as a locly made replacement for rice because in this time isreal was really poor so the government had food sanction. Today is a very popular carb side in isreal made like rice(but more of a ratio of 1.25 water -1 carb than rice 2-1) but we add chicken Boolean power into it. But also it's can be made whit other stuff and you can kinda make whit that a easy risotto if you know what you are doing

Ortzo looks alot like ptitim. ptitim (or isreali cooscoos) where invented in isreal in the 60s as a locly made replacement for rice because in this time isreal was really poor so the government had food sanction. Today is a very popular carb side in isreal made like rice(but more of a ratio of 1.25 water -1 carb than rice 2-1) but we add chicken Boolean power into it. But also it's can be made whit other stuff and you can kinda make whit that a easy risotto if you know what you are doing

No doubt china has some good foods, but if you really care about discovering more you should go a bit deeper than this bad and this good. Have you ever tried the true Parmigiano? Or the true Modena vinegar? Oh the friggione? Or the real homemade italian ragù? There are so many strong and particular tastes in italy, these were only from one region!
@@alphahurricane7957 I agree that there are some very delicious Italian foods and cheeses that I've tried, but I still prefer Chinese food over Italian food any day. The Chinese food is just more flavourful and diverse for me. I've tried so many different Chinese dishes from different parts of China, and they're all so unique and delicious in their own ways. The flavours and spices used in Chinese cuisine just seem to be more to my liking than those in Italian cuisine. But I understand that everyone has different tastes and preferences when it comes to food, and that's what makes the world so fascinating!
