If you add the white sugar in w the peeled bananas first, it will make mashing the bananas so much easier. The sugar crystals help! That’s how I start my banana muffins, been doing it for 30yrs ❤

I've been canning bananas for the past two years now. I chop my bananas using my ninja food pitcher type process thing it holds a couple of quarts of bananas. I put these mashed up bananas into my half pint jars and add a teaspoon of lemon juice to each jar I leave double the head space at least 2 inches and process in the water bath canner for 15 minutes after I reach rolling boil. Everything goes into the canner at room temperature and the water in canner is hot tap water. I make sure everything is good and clean that I use. Do not forget to leave extra head space for the bananas are cooking the whole time the canner is coming up to boil and they expand, like dried beans do. I add no sugar just bananas and lemon juice. We use these in hot oatmeal or in making banana bread. I got tired of running out of fresh bananas so I always have bananas whenever I want them. If I bring my canner up slowly it helps so things don't get expanding like crazy and wanting to cipher, when you try to back it down. I may try to cook them on the stove top next time before I put them in the jars to help with them expanding in the jar, for I have had a couple run over. I liked your video good to see how people are doing bananas not many video on bananas.

So you didn’t need to precook the banana? Just right in the jars and into the bath? And Bob’s your uncle?!? 🫶💕🥳 love when things can be so easy,. And yes the bit of lemon juice,. So just float that on top of the banana? Or mix it in the jar of banana? I would love to know! ❤ thank you for sharing this with us!

I just added the lemon juice to the jar like I do when I am doing tomatoes, everything goes into the jar at room temperature and the water in the boiling water canner is put in from the hot tap water at sink, then I bring to a rolling boil and start the timing at least 15 minutes at that point, it you process it longer it isn't going to hurt it none, it cooks in the jar, oh course you want them to seal, leave a little extra head space like I said for it does expand and I also bring it up to boil in the canner at a slow steady pace not rip roaring, slow and steady wins the race they say, and no broken jars from thing rocking around in the canner.@@area420canada

I just canned eggs based off your water bath method. There are too few women that care about this stuff. I appreciate you doing it old school and ignoring the USDA or at least acknowledging pressure canning is not the only route to success. I was giving away a dozen eggs from my chickens at least once a week before canning.

Banana butter is so good. I was a bit surprised with the amount of sugar also, so I cut out the white sugar and just used brown. And my family doesn't like nuts in anything so I omitted that as well. Yours was so pretty. I put a dollop in plain yogurt, so good!

I found your channel and you motivated me and inspired me to continue to water bath and not worry about pressure, canning and going out and buying a pressure canner. As you have said before people of been water bathing for decades, and I have read and heard other countries, they don’t even know what a pressure canner is :-) since last year finding your channel, I can at least one thing a month. Today was our potato harvest, and some organic carrots I found on sale at the store.❤❤❤❤❤

Good to see young women canning like this, even better when they make it work with a learning video for those who want to, and don't know how. Bless your Hands. I've been doing it for 6 decades now. I've opened so many jars of foods I canned 5 years after canning them (water bath method only), and they taste as good as the day I made them, especially the preserves. I can usually keep them that long, but try not to push it past that mark very often. Usually we eat what I have canned within 3 years time, since I bulk can like you do. I haven't canned meats though, my great grandmother and grandmother never did, so I just don't either. The thought has come to mind to try it though, maybe sometime next year. Great video as usual.

Hi, I just want to tell you how much I enjoy your RUclips posts. I am surprised that you do not label and date your jars. All the other RUclipsrs can't express enough to label and date your jars. I am just starting to can and I have lost at least one or two jars that do not seal. I ordered some forjars lids a couple of weeks ago but I can't wait on them to can my stuff so I am using the lids that come with the jars. I hope you keep posting because I really enjoy them.

    • @adreabrooks11
      @adreabrooks11 5 дней назад

Welcome to canning! It's a lot of work, but so rewarding!
The choice of labelling comes down to how organized your pantry is. I've known some old ladies who run their kitchens with military precision, and whose pantries are better organized than anything I could hope to achieve. Since they always know where everything is, according to contents and when the jars were canned, they never need to label.
In other pantries, where stuff gets shuffled around to make room, and contents are always coming and going, labels are a necessity. This is especially true if (like me) a person does a lot of similar-looking products.
For example: I no longer bother to date my stuff - my lowest shelf is new products, top shelf is oldest; each year, I cycle them upward. This gives me a chance to inspect the jars for rust, lost seals (none so far, but it never hurts to be diligent) and so far. Anything that's starting to rust around the edges, and anything left on the top shelf goes into the kitchen cupboard for use as soon as practicable.
That said, I do a ton of similar-looking reddish-purple jams. Saskatoon berries, mulberries and wild grapes are all plentiful in my area, so into the pantry they go! Of course, it wouldn't be the end of the world if I brought out a wild grape jam for tarts instead of a mulberry - but I'd hate to mistake it for puréed beets. 😅 Same goes for beef vs. goat vs. venison, different-flavoured pickles or recipes with different types of seasoning. If the zombie apocalypse happens, and the world runs out of jar labels and markable tape, I'm sure I could get by, but I like the convenience of knowing instantly what's on-hand.
PS: Don't worry about lost seals; it happens to the best of us on occasion. Just make sure to be diligent in inspecting the tops of your jars for chips, wiping them clean after adding the contents (even tiny irregularities on the jar rim can sometimes prevent a seal), and adding adequate headspace (the space is what creates a vacuum in the jar, and suctions the lid down tight - and, in some cases, prevents the contents from bubbling up and getting the aforementioned food particles between the rim and lid). Those three points go a long, long way toward preventing jars from sealing. Hope this helps!

I love your channel….I’m wondering I have an apple tree and would like to preserve raw apple juice…how would the Amish preserve long term fresh squeezed raw apple juice? Can I pour this in a clean. Mason jar and remove the air with the food saver accessory for mason jars and store on shelf? Or do I need to cook and water bath?

I have made banana rum raisin jam. It was okay on oatmeal, but better on ice cream.

There’s a recipe in the Ball book for banana butter but it doesn’t turn out dark. Might try both and compare!

What about using the butter over Neapolitan ice cream to make a modified banana split?

I thought that putting something on the bottom of a pot while doing water baths prevented the glass jars from busting. Is that not a thing? Only curious because if I can fit more jars in my pot without the towelettes or basket at the bottom... Game On!!

I’ve done some reading on canning baby food, but everything I’ve read says not to… One of the things I wanted to can was bananas, what do you think? I want my baby to eat food without toxic stuff. Send help ❤

Interesting. I would bet you should be able to do it like apple or pear or whatever butter which doesn’t need all the added sugar.

Sounds delicious on oatmeal. Please have your daughter do a taste test, if she would like to.
